Easy to cook Vegetarian Recipes for Lent 2021. Lent is a religious observance of 40 day period of fasting and abstinence as per the Christian Liturgical Calendar.

During the Lenten season, Christians give up their worldly pleasures, like smoking, drinking alcohol, eating meat, etc., and indulge in prayers and penance. Some prefer to give up meat but include fish and eggs in their diet. Likewise, some hard-core followers of Lent give up eating meat, fish, and eggs, as well and follow a strict vegetarian diet.

For the people who follow a total vegetarian diet during Lent, I have listed a few of my easy-to-cook vegetarian recipes.

Easy to cook Vegetarian Recipes – BreakFast

Breakfast is the most important meal of the day and has to include protein and carbs. The recipes that I have listed below besides being easy to cook are full of nutrients to combat your day.

  1. SOFT IDLI WITH CHUTNEY. Idlis are steamed rice cakes that are easy to cook and also high in nutrition too. Besides, the perfect combination of rice and urad dal is important for getting soft and fluffy idlis. Idlis can be enjoyed for any meals be it breakfast, lunch, or dinner but best had for breakfast as it gives you the required nutrition for the day.

2. MIXED DAL DOSA. Mixed Dal Dosa or Mixed Lentil Dosa is a high protein breakfast recipe. This dosa is made with one part rice and 2 parts mixed dal or lentils. Quick and easy to prepare, this is a highly nutritious recipe and makes a perfect breakfast menu.

Lunch or Dinner Recipes

Additionally, I have a few lunch or dinner recipes that comprise of lentils and green vegetables. These are quick and easy to prepare and can be eaten with rice or chapatis.

  1. MIX DAL TADKA. This is a recipe that is regularly prepared in all Indian homes. Besides being rich in protein this recipe with lentils is nutritious too. Mix Dal Tadka Recipe is a Punjabi Style Dal Tadka recipe that has a mix of 4 – 5 different kinds of lentils.

2. CAULIFLOWER DAL makes an equally scrumptious weekday meal. This recipe is not only delicious but also gets ready in under 25 – 30 minutes. Chunks of cauliflower in toor dal and coconut-based gravy are a comfort meal on any weekday.

3. BEANS FOOGATH. Foogath is a vegetable dish cooked with onions, chillies and then garnished with pepper powder and grated coconut. Foogath is very mild on spices but uses only chillies and pepper powder for spice.

4. DRUMSTICK FOOGATH. Drumstick is a staple vegetable in India and also easily available throughout the year. Moreover, it is considered a super-food these days and said to have many health benefits. Drumstick is also known as Moringa and the entire plant has medicinal properties. You must certainly include this vegetable in your diet

5. SPICY BHINDI FRY. This spicy & Easy Recipe for Bhindi Fry is another traditional stir fry Indian vegetarian recipe. Ladyfingers or okra is Bhindi in the local Hindi and is available throughout the year in India. We Indians use Bhindi or Okra extensively in our cuisine in curries or even sambhar.

6. GREEN PEAS & CARROTS – Gajar Matar Subzi is also a traditional Indian-style vegetable preparation. Since carrots and green peas are available in plenty this season, go ahead and make this delicious recipe. Besides, the sweet taste of winter vegetables adds a unique flavour to this dish.

7. SNAKE GOURD VEGETABLE RECIPE – Snake gourd is another popular vegetable in Indian cuisine. Snake Gourd is Padwal in Hindi and always available throughout the year in India. You can cook snake gourd in a variety of different ways and one such recipe is this Snake Gourd with Dal. This is a dry vegetable that you can have with chapatis or even as a side with your simple Dal-rice.

  • PUNJABI CHOLE RECIPE. This Punjabi Chole Recipe has been a keeper for almost two decades and it has been one of the best chole recipes that I have ever tasted. I am sure you will agree with me too once you try out this recipe. Rich in proteins, chole, or chickpeas is widely consumed in India especially in the North. This is an authentic recipe that you must try out during this season. You could also enjoy Punjabi Chole with some bathure, parathas or even chapati.
