China Grass or Agar Agar Pudding Recipe

Now, let’s dive into the step-by-step process of making the perfect Agar Agar or China Grass pudding. Follow this recipe, and you’ll be rewarded with a dessert that will impress your family and guests.

To make China grass or agar-agar pudding you will need china grass strips or agar agar/china grass powder. These are easily available at any supermarket or online. You will also need milk, sugar, and vanilla essence.

You could also add colour to the pudding if you want to impress your little kids at home. I generally let the original colour of the pudding be and top it with slivered almonds or any nuts like cashew nuts or pistachios. Sometimes I like to add a few strands of saffron or Kesar.

Ingredients

  • Milk – 1 liter (full fat)
  • Sugar – 3/4 cup or 150 grams or add as per taste
  • Agar-agar – 2 to 3 tsp or 8 to 10 grams of China grass strips
  • Water or Milk – 1/4 cup
  • Vanilla essence – 1/2 tsp
  • Nuts, as desired

To make China Grass Pudding, first, soak the China grass in water for a few minutes and then melt it on low to medium flame. Keep stirring occasionally until the strips melt and you get a thick gelatin-like liquid. Do not melt China grass under high heat to hasten the melting process or it will lose its thickening properties.

Next, pour the room-temperature milk and mix well by stirring on a low flame. Add sugar and vanilla essence and then turn off the heat.

If using Agar-Agar powder, add it directly to the boiling milk and stir to mix well or dissolve it in 1/4 cup of warm milk. Then add sugar or condensed milk to sweeten the pudding. Also, flavour with vanilla essence or cardamom powder.

Pour the pudding mix into a flat dish and top it with some nuts and refrigerate when it reaches room temperature. China Grass or Agar-agar pudding sets at room temperature but you can best enjoy it when it’s cool. Hence, let the pudding set in the refrigerator for 2 to 3 hours before serving.

Tips for Making the Perfect Agar Agar or China Grass Pudding

To ensure your Agar Agar or China Grass pudding turns out perfectly every time, here are some helpful tips to keep in mind:

  • Choose high-quality Agar Agar or China Grass: Opt for a reputable brand to ensure reliable results. Cheap or expired ingredients may not set properly or give your pudding the desired texture.
  • Adjust sweetness to taste: The amount of sugar mentioned in the recipe is a starting point. Feel free to adjust the sweetness according to your preference. You can also use natural sweeteners like honey or maple syrup as alternatives to sugar.
  • Properly dissolve China Grass or Agar Agar: It’s crucial to melt China Grass completely in water before adding it to the milk. This will prevent lumps and ensure even distribution throughout the pudding. If using Agar Agar powder add directly into the milk and dissolve completely.
  • Simmer, don’t boil: Once you add the Agar Agar or China Grass mixture to the milk and sugar, bring the mixture to a gentle simmer, not a rolling boil. Boiling vigorously can cause them to lose their gelling properties.
  • Allow sufficient setting time: Give your pudding enough time to set properly by refrigerating it for at least 2 hours. This will ensure a firm and creamy texture.

By following these tips, you’ll be well on your way to mastering the art of making the perfect China Grass or Agar Agar pudding.
