Ingredients for Mutton Chops in Green Masala

“Ingredients for Mutton Chops.”

  • Mutton or Lamb Chops – 6 to 7 or approximately 700 grams
  • Juice of 1 sour lime
  • Salt to taste
  • For the Marination (Green Masala Paste)
    • – Garlic – 7 to 8 cloves
    • – Ginger – 1.5 inches
    • – Green Chillies – 7 to 8
    • – Whole spices (Cinnamon stick – 1″, Peppercorns – 3/4 tsp, cloves – 4)
    • – Cumin seeds – 3/4 tsp
    • – Turmeric powder – 1/4 tsp
    • – Mint leaves – 1/4 cup
    • – Coriander leaves – a small bunch
  • Other Ingredients
    • – Potatoes – 4 to 5 medium (boiled & mashed. Add a little salt)
    • – Eggs – 2 whole beaten
    • – Plain flour/maida – 1/2 cup
    • – Dried breadcrumbs
    • – Oil for frying.

How to Cook Mutton/Lamb Chops

  1. Prepare the chops by flattening them with a mallet for even cooking. You could also get this done from your butcher.
  2. Wash the lamb chops well and add salt and lime juice or vinegar.
  3. The next step is to blend the ingredients for marination into a smooth paste. Apply this paste all over the mutton chops and set aside for at least 30 minutes to an hour to allow the marination to seep into the chops.
  4. Now transfer the chops into a pressure cooker, preferably in a single layer. Add half a cup of water and pressure cook on medium to high heat until 3 whistles. Cooking time depends on your pressure cooker too.
  5. Once done, open the lid of the pressure cooker and dry up the liquids completely on a high flame. Then transfer the mutton chops onto a plate to cool.
  6. Boil potatoes in a pressure cooker and mash them when cool. Add salt to the potatoes.
  7. Frying the Mutton/Lamb Chops –
    • Roll the chops in flour and then coat with a thin layer of mashed potato.
    • Next, dip it into beaten eggs and coat it with dried breadcrumbs, similar to the potato chops recipe.
    • Heat oil in a pan and shallow fry the mutton chops until golden on medium heat.
    • Serve hot with mint chutney or tomato ketchup.

For Marination

  • ½ cup Flour for coating
  • 2 whole Eggs beaten
  • ½ cup Dried breadcrumbs
  • Oil for frying.

  1.  You could also fry the mutton chops without the potato coating if needed.
  2. Adjust green chillies to suit your taste.
  3. Cook potatoes in a pressure cooker and mash with a little salt
  4. Adjust salt to taste.
