How to Prepare Ash Gourd Chicken Curry

Ingredients for Ash Gourd Chicken Curry.
To make Ash Gourd Chicken Curry, you will need –

  • Chicken 800 grams
  • Ash Gourd – 1 medium cut into pieces
  • Potato – 1 medium sliced
  • Bay leaf – 1
  • Cinnamon 1-inch
  • Cloves -4
  • Cardamom -3
  • Ghee – 2 tbsp
  • Onions, chopped – 2 medium
  • Turmeric – 1/4 tsp
  • Pepper powder – 1/2 tsp
  • Coconut Milk – 1 cup (1st extract) + 2 cups (2nd extract)
  • Tomato, chopped – 1 medium
  • Ginger – 1 inch chopped
  • Green chillies – 5 to 6
  • Vinegar – 2 tbsp
  • Chilli flakes (optional) – 1 tbsp
  • Freshly crushed peppercorns – 1 tbsp
  • Salt to taste

Preparation of Ash Gourd Chicken Curry.
First, heat ghee in a pot and add the whole spices and onions, and sauté until the onions turn translucent. Then, add the chicken pieces and fry for 2 to 3 minutes until the colour changes. Also, add ash gourd pieces and one potato cut into slices.

Next, add pepper, turmeric powder, slit chillies, tomato, and ginger juliennes along with the 2nd extract of coconut milk. Cover and cook until the chicken and Ash Gourd are tender, stirring occasionally.

Once done, add vinegar, chilli flakes, and the thick coconut extract. Simmer for two minutes and then turn off the heat. Serve hot with rice, appam, chitaps, or roti.

Serving and Storing Ash Gourd Chicken Curry.

To serve Ash Gourd Chicken Curry, it is best to pair it with some steamed rice or bread. You can garnish with some fresh coriander leaves for added flavour.   • 800 grams Chicken on the bone
  • 1 medium Ash Gourd cut into pieces
  • Whole spices – Bay leaf – 1, Cinnamon – 1, Cloves – 4, Cardamom -3
  • 2 tbsp Ghee or Oil
  • 2 medium Onions chopped
  • ¼ tsp Turmeric powder
  • ½ tsp Pepper powder
  • 1 cup Coconut Milk 1st extract + 2 cups (2nd extract)
  • 1 medium Tomato chopped
  • 1 inch Ginger, cut into juliennes
  • 5 to 6 Green chillies, slit
  • 1 tbsp Vinegar
  • 1 tbsp Chilli flakes optional – 1 tbsp
  • 1 tbsp Freshly crushed peppercorns
  • Salt to taste

  • Cover and cook until the chicken and Ash Gourd are tender, stirring occasionally.
  • Once done, add vinegar, chilli flakes, and the thick coconut extract. Simmer for two minutes and then turn off the heat.
  • Serve hot with rice, appam, chitaps, or roti.

Notes

  1.  Cut ash gourd into pieces as desired. You can skip potato but they taste good in the stew.
  2. To extract coconut milk – blend half a coconut with 1 cup water and extract 1 cup thick milk.  Next, transfer the same coconut into the blender jar and add 2 cups water and blend to extract 2 cups thin milk.
  3. Use freshly crushed pepper powder for flavour.
  4. Adjust vinegar to suit your taste.  You can add lime juice instead.
