This being a traditional recipe, easy to prepare, and delicious, my mum would make it quite often at home. We East Indians love our Mutton Stew and it has a prominent place on an East Indian Dining table, especially during festive occasions and weddings.

This is one of the Best Muton Stew Recipes I have ever eaten. The spices in this recipe are so minimal that you can literally enjoy the taste of succulent mutton in the dish.

Without using strong spices, you can enjoy this Mutton Stew with vegetables such as carrots, beans, green peas, and potatoes making it a healthy meal for kids and older family members. Mutton Stew pairs well with steamed rice or bread. East Indians love to have this with their Fugias or Chitaps.

  • MUTTON. Buy shoulder-cut mutton that is generally tender and succulent and best for this recipe of Mutton Stew.
  • ONIONS & TOMATOES. Chop them finely and saute them in oil/ghee or butter until they turn soft. This makes a nice base for the Mutton Stew which otherwise has a thin soup like gravy.
  • GINGER, GARLIC & GREEN CHILLIES. Chop these finely and then add them to the onion and tomato mixture. Chillies are the only spice component, other than pepper in this mutton stew, so add to suit your taste. You could give the garlic a skip but ginger gives an earthy flavour to the mutton stew which is so comforting.
  • WHOLE SPICES AND GARAM MASALA POWDER. Spices such as cardamon, cinnamon, and cloves add immense flavor to the stew. Adding a dash of Garam Masala Powder enhances the flavour of the Mutton Stew.
  • VEGETABLES. Include seasonal vegetables such as peas, beans, and carrots in this Mutton Stew recipe. For those who love potatoes, feel free to add potatoes cut into cubes along with the other vegetables.
  • PEPPER POWDER. Use as much pepper powder as per your tolerance level. This will make your stew more spicier and flavourful, so recommend not to skip it.
  • THICKENER. Mutton Stew basically has a fairly thin soup-like gravy. We add a little flour (wheat or maida) or fine semolina to thicken this and give it some structure. This is an optional step and depends on how you like to enjoy your Mutton Stew.

How to make Mutton Stew Indian Style (Mutton Stew Preparation)

Ingredients:

  • 750 grams Mutton/lamb
  • 4 onions, finely chopped
  • 2 medium tomatoes, chopped
  • 5 – 6 green chillies
  • 2-inch ginger
  • 4 – 5 garlic flakes
  • 2 potatoes
  • 1 medium carrot
  • 1 cup green peas
  • 8 to 10 French beans (optional)
  • Whole spices – cinnamon, cardamom, cloves, and pepper
  • Garam Masala Powder (1-inch cinnamon, 3 – 4 cardamom, 4 – 5 cloves ground into a fine powder)
  • 1 tbsp flour/semolina for thickening the stew.
  • Oil/ghee or butter for cooking
  • Salt to taste
  • 1 tsp pepper powder

Method:

  • Cook the mutton in a pressure cooker with salt, turmeric powder, and a few whole spices such as cinnamon, cloves, and green cardamom. Also, add 2 onions, finely chopped, and 1-inch chopped ginger.
  • In a large pot heat oil/ghee or butter and fry the chopped onions, green chilles, garlic, and ginger until the onions turn translucent. Remember, we don’t need to brown the onions here.

  • When onions are translucent add tomatoes and cook till they are soft and mushy. Add in the flour and mix well.
    PS: You could use whole wheat flour /all-purpose flour or fine semolina for thickening the stew. Or you may simply skip the flour and enjoy the stew as it is. Some also like to use cornflour, but I personally do not prefer this as it makes the stew a little slimy.

  • Cut the vegetables length-wise or as you prefer and add them to the pot along with some, salt and mix well.
    PS: Vegetables like carrots, green peas, and potatoes go well with this recipe of mutton stew. I like to add French beans to the stew because they are so crunchy and flavourful when you bite into them.

  • Now, add the pressure-cooked mutton pieces along with its stock and cook till the vegetables are tender and the flavors incorporated into the vegetables. Finally, add the garam masala powder and pepper powder and let the stew with the mutton and vegetables to simmer further for 2 to 3 minutes. You can then turn off the heat.

  • 1 tbsp flour/sooji for thickening the stew
  • 1 tsp 1 tsp pepper powder
  • ½ tsp turmeric powder
  • Oil/ghee for cooking
  • Juice of 1 lime
  • Salt to taste

Instructions
 

How to make Mutton Stew

  • Boil Mutton/lamb in a pressure cooker, till tender with 2 chopped onions, whole masala, turmeric and salt.
  • Cut vegetables, as desired and keep aside.
  • Heat oil/ghee in a vessel. Add the chopped onions, chillies, ginger and garlic and saute till onions are translucent.
  • Add tomatoes and cook till it softens.
  • Add flour/semolina and mix well. Also add the cut vegetables and salt.
  • Pour in the mutton along with the stock and cook till the vegetables are tender.
  • Put in the garam masala powder and pepper powder. Add juice of one lime.
  • Serve mutton stew with steamed rice or crusty bread.

Notes

  1.  Add a tbsp of vinegar or juice of half a lemon to give the mutton stew a lovely tang.
  2. Adjust the quantity of vegetables as per your choice.
  3. Preferably add homemade garam masala powder.
