This Quick Recipe of Chicken Stew with vegetables has carrots, green peas, and potatoes and coconut milk. It is awesomely delicious and also quick to make.

This is a healthy and wholesome recipe of Chicken Stew with Coconut Milk wherein you have loads of vegetables, meat, and the goodness of fresh coconut milk.

This Chicken Stew simple recipe is also an East Indian Style recipe. Generally, I make Mutton Stew with vegetables which is also a very popular recipe among the stew recipes.

Chicken Stew with Coconut Milk

Chicken Stew recipe is the same as the mutton stew recipe but with an addition of coconut milk. This chicken stew turned out to be very tasty and we also did not miss the mutton in this recipe. Adding coconut milk to the stew makes it creamier and tastier.

What I like about this chicken stew is that it gets ready in minutes and moreover the vegetables and the chicken cook quickly. Later to make it a little creamier I add coconut milk.

Finally, we also add a lot of pepper powder to the stew to make it slightly spicy. You could use any vegetables of your choice, but I prefer to use carrots, potatoes, and green peas.

How to make Chicken Stew with Vegetables

Let’s learn how to make this simple Chicken Stew recipe with lots of vegetables.

Ingredients for Chicken Stew

  • CHICKEN – We prefer to use chicken on the bone for this recipe. Cooking stew with chicken on the bone makes the stew more flavourful.
  • ONIONS – I prefer to use regular onions and chop them finely for this stew.
  • GINGER & GREEN CHILLIES – Finely chopped ginger and garlic also goes into the fried onions.
  • WHOLE SPICES – Add a few whole spices such as cinnamon stick, cardamom, and cloves before you add the onions. Letting the spices fry for a few seconds releases its flavour and yields a flavorsome stew.

Vegetables for Chicken Stew

You could also add any type of vegetables for Chicken Stew. French beans and mushrooms also taste wonderful in any stew recipe.

Notwithstanding this, the quantity as well as the number of vegetables depend on your choice, add more if you like.

The vegetable that I prefer to add for my Chicken Stew –

  • French beans
  • Carrots
  • Green Peas
  • Potatoes

Preparation of Chicken Stew

  • Firstly, take 500 grams of chicken pieces and add a teaspoon of salt and let it rest for at least 10 to 15 minutes.
  • Then in a pan add 3 tbsp oil, and put in a few whole spices like a cinnamon stick, cardamom, and cloves. Let the spices fry for a few seconds and then add two medium finely chopped onions.
  • Also add 7 – 8 chopped green chilles, and 1-inch ginger and fry till the onions are translucent.
  • When the onions are translucent, then add in the chicken pieces and the turmeric powder and mix well.
  • Fry the chicken pieces for about 4 – 5 minutes and then add the vegetables like carrots, potato, and green peas and mix well.
  • After you mix the vegetables and the chicken, add one cup of coconut milk. Let the chicken and the vegetables cook. This should take you approximately 10 – 15 minutes.
  • Let the chicken stew simmer for a few more minutes and then add in the pepper powder, garam masala powder, and lemon juice. I prefer to add a lot of pepper powder to the stew as this gives a wonderful flavour to the stew.

Ingredients
  

  • 500 grams Chicken on the bone add 1 tsp salt and set aside
  • 1 inch Cinnamon stick
  • 3 – 4 Cloves
  • 2 medium Onions, finely chopped
  • 1 inch Ginger, chopped
  • 7 – 8 Green chillies, chopped
  • 1 Carrot, cut
  • 1 Potato, diced
  • 1 cup Green peas
  • 1 cup Coconut milk
  • 1 tsp Pepper powder
  • ½ tsp Garam masala powder
  • Juice of half a lime
  • 3 tbsp Oil for cooking
  • 1 tsp Salt, or to taste

Instructions
 

  • Heat oil in a pan and add cinnamon stick and cloves. Add the chopped onions and fry till transclucent. Also add the chopped green chillies and giner.
  • When onions are translucent, add the chicken pieces and turmeric powder. Fry for 4 -5 minutes.
  • Now add the carrots, potato and green peas and mix well. Add coconut milk and let the chicken cook well along with the vegetables. Adjust the salt.
  • After the chicken is cooked add the pepper powder, garam masala powder and juice of half a lime. Let the stew simmer for 2 -3 minutes and then switch off the flame.

Notes

  1.  You can add mutton instead of chicken.  But cook the mutton in a pressure cooker with some salt and then add to the onions.
  2. If you find that the coconut milk has curdled, add a tsp of cornflour to half a cup of water and pour it into the stew. 
  3. After you add the vegetables, adjust the salt.  Add more if required.

I loved this receipe so much my kids enjoyed eating Chicken stew because they don’t like mutton I had made once but it didn’t turned out because I never knew you have to add coconut milk.
