How Many Whistles To Cook Mutton Curry in a Pressure Cooker?

Cooking Mutton Curry in a Pressure Cooker! It will take you at least 5 to 6 whistles to cook mutton in a pressure cooker on a medium to high heat.

We like to cook mutton on a low heat after the second whistle. Lower the heat to the minimum and then allow the mutton to cook for at least 10 to 12 minutes. Thus the mutton in the curries tends to be softer and tender every time.

How Long Do You Cook Mutton Curry?

Cooking Mutton Curry in a Pot will take you a minimum of 45 minutes to one hour. Once you have all the ingredients, you are ready to cook. Start by marinating mutton in spices, as per the recipe and let it rest for at least 30 minutes. The mutton will tenderize and cook faster.

Now add oil to your cooking pot and sear the marinated mutton. Add the other ingredients as per the recipe and mix well. Add a cup of water, cover and cook on a low to medium heat for a minimum of 45 to 50 minutes.

You know your mutton curry is ready once you see oil floating on the curry and the mutton is tender. Add the other aromatics and spices and garnish as suggested. Enjoy!

Ingredients for Mutton Curry (Mutton Frithad)

For this Mutton Curry with Coconut, we will be using half a kilogram of mutton with bones. Let’s go through the other ingredients, you probably have at hand:

Coconut : I like to use dried coconut for this mutton curry. Dried coconut gives a nutty flavour to the gravy. Feel free to use freshly grated coconut if you like. Even coconut milk works just as fine for this Mutton Curry Recipe.

Red Chillies: I use a combination of Kashmiri and Bedki chillies for this recipe for spice as well as colour. Kashmiri chillies render a bright red colour to the mutton curry. Bedki chillies give the required spice as well as colour to the curry.

Whole spices: A few whole spices like cinnamon, cloves, pepper, and cardamom give a wonderful flavour and aroma to the curry. A little of each spice is just enough to make the curry flavourful. You could also choose to use the homemade Garam Masala Powder instead.

Other spices: Use a tablespoon of coriander seeds and a teaspoon each of cumin seeds, poppy seeds, and sesame seeds. Slightly roast the spices on a hot griddle to release their flavours and aroma.

Tamarind: Unlike continental cuisine, the East Indian Cuisine uses tamarind as a souring agent. A small ball of tamarind that is soaked in warm water gives a slight and the much-required tang to the mutton curry. Use lemon juice instead of tamarind, if you like.

Onions, garlic & tomatoes. Slice the onions and roast them along with the coconut. Roasting the onions and coconut removes the sweetness and gives a smoky flavour to the masala. Also lightly roast a few garlic flakes. You will need to add this along with the red chillies and other spices to make a smooth paste. You could also blend the tomatoes in the masala but I prefer to saute tomatoes in oil or ghee for this mutton curry

Oil/ghee. Use ghee instead of oil to cook this mutton curry. Just two tablespoons of ghee will make the gravy rich and flavourful. You may like to use refined vegetable oil instead, that is also absolutely fine.

Easy Step-by-Step Instructions for Preparing Delicious Mutton Curry

  • Roast the Spices, Onions and Coconut.
    To bring out the flavours and aroma of the whole spices, coriander, cumin, poppy, and sesame seeds lightly roast them in a hot pan for a few seconds. Also, roast the dried red chillies in the same pan. Also roast the sliced onions and coconut onion until they turn light brown in colour. Transfer all the ingredients into a blender and grind into a smooth masala paste with water.
  • Saute Spices, Tomatoes and Masala Paste.
    Heat 2 tbsp ghee or oil into a pressure cooker and add a few whole spices and bay leaf. Add chopped tomatoes and saute till it turns soft. Next add in the masala paste and saute for 2 to 3 minutes or until you see the oil oozing out.
  • Add the Mutton and Pressure Cook.
    Later add in 500 grams mutton or goat meat and fry for 4 to 5 minutes along with the masala paste on a medium flame. Add the tamarind juice and approximately 300 ml of water and close the cooker lid and let the mutton cook on a high flame. After the 2nd whistle, reduce the heat and let the mutton cook until soft for at least 10 to 12 minutes.
  • Garnish the Mutton Curry.
    Turn off the flame and let the cooker release its steam completely before you could open the lid. Finally, garnish with fresh coriander leaves (optional).
  • Mutton curry with coconut cooked in a pressure cooker is ready to be served. Enjoy!

Mutton Curry with Coconut (Mutton Frithad) is another popular mutton curry recipes from the East Indian cuisine. This mutton curry is made with coconut and a few spices that are roasted.

Ingredients

  • Mutton with bones – 500 grams

  • Onion – 1 large

  • Tomato – 1 medium

  • Tamarind Extract – 1/4 cup

  • Ghee – 2 tbsp

  • For the Frithad Masala Paste (Roast & grind to a paste)
  • Coconut – 1/4 cup (dry)

  • Red chillies (8 Kashmiri + 4 Bedki)

  • Coriander seeds = 1 tbsp

  • Cumin seeds – 1 tsp

  • Sesame seeds – 1 tsp

  • Poppy seeds – 1 tsp

  • Garlic – 7 to 8 cloves

  • Coriander leaves – 2 tbps

  • Whole spices (1-inch cinnamon, 3 cloves, 2 cardamom, 1/4 tsp peppercorns)

Directions

  • Roast spices – coriander seeds, cumin seeds, whole spices sesame seeds, poppy seeds, and red chillies.
  • Also roast the onions and coconut till light brown.
  • Transfer all the ingredients into a blender and then blend into a fine paste with water.
  • Preparation of Mutton Curry
  • Heat 2 tbsp ghee or oil into a pressure cooker and add a few whole spices and bay leaf. Add chopped tomato and fry till it softens.
  • Now add in the blended masala paste and fry for 2 to 3 minutes or until you see the oil oozing out.
  • Later add in 500 grams mutton or goat meat and fry for 4 to 5 minutes along with the masala paste on a medium flame.
  • Add the tamarind juice and approximately 300 ml of water and close the cooker lid and let the mutton cook on a medium flame till done.
  • Switch off the flame and let the cooker release its steam completely before you could open the lid. Garnish with fresh coriander leaves.

Notes

  • When cooking mutton in a cooker – after the 2nd whistle, reduce the flame and let the mutton cook until soft for at least 10 to 12 minutes.
