Prawn and Egg Noodles – a quick and delicious noodles recipe with eggs, prawns, and vegetables tossed in a stir-fry sauce mix. Makes a quick and easy weeknight dinner recipe that will impress your family. This is an easy option after a tiring day at work. Moreover, it’s much better than ordering from any restaurant and faster too.

In this recipe, we toss the noodles, vegetables, prawns, and eggs in an aromatic stir-fry sauce. The Prawn and Noodles recipe is so quick and easy that you will find yourself making it too often and your family asking for more.

Ingredients for Prawn and Egg Noodles

  • PRAWNS/SHRIMPS – I have used 200 grams of shelled and deveined prawns. After washing them drain thoroughly and add salt and allow them to rest for 5 minutes. You could use fresh prawns or even frozen prawns are fine. Other protein choices are boneless chicken and pork.
  • NOODLES – Egg or plain noodles are acceptable for this recipe. Use one pack of noodles and cook noodles al dente, as per instructions on the pack. Drain and add a tbsp of oil all over the noodles and set them aside.
  • EGGS – Use two or three whole eggs and whisk them with some salt and pepper.
  • VEGETABLES – Use any stir fry vegetables of your choice. I prefer to use carrots, cabbage, beans, and capsicum and cut them into juliennes. You could even use mushrooms, baby corn, and broccoli.
  • ONIONS, CHILLIES, & GARLIC – Spring onions, chopped ginger, and garlic. Add a piece of chopped ginger, if you like.
  • CONDIMENTS
    • Soy sauce – 1/2 tbsp
    • Chilli sauce – 1/2 tbsp
    • Oyster sauce – 1/2 tbsp
    • Vinegar – 1 tbsp
  • OIL. We will need oil for cooking and frying the egg and shrimp/prawns. Also, 1 tablespoon of oil to top the noodles. This is optional but adds a nice earthy flavour to the dish.

Prawn and Noodles Recipe

Prep Time: 15 minutes

Cook Time: 10 minutes

Serves: 4 persons

Step I – Heat a pan and add a tsp of oil. When the oil is hot, add the beaten eggs to make a thin omelet. Roll the omelet and cut it into strips and set it aside.

Step II – Next, heat another tsp of oil and saute the prawns for a few minutes, and then remove them onto a plate. Set aside.

Step III. In a wok, add cooking oil. When the oil is hot add chopped garlic and chillies and stir fry for a minute on high heat. Then add the spring onions and continue to stir fry for a minute on high heat.

Step IV. Add in the vegetable juliennes and stir fry on high heat. We need to retain the crunch of the vegetables. After about a minute, add in the fried prawns and the egg omelet strips and continue to stir fry for a minute.

Step V. Now add the boiled noodles, soy sauce, chilli sauce, oyster sauce, and vinegar. Mix well with the noodles, shrimp, eggs, and vegetables. Also, add pepper powder and then the onion leeks. Combine all the ingredients and top the noodles with a tablespoon of sesame oil for that toasted flavour. Switch off the heat and serve Prawn and Egg Noodles hot.

Serving Suggestions

You can serve prawns and Egg Noodles as your main course meal on its own. Makes a wonderful no-fuss weeknight dinner recipe. You could also serve this with some Pork Chilli Stir Fry, Soy Garlic Chicken, or Sweet and Sour Prawns. Shrimp Noodles also pair well with dumplings and soup.

  • 150 grams Noodles boiled as per instructions on the pack
  • 2 Eggs add salt & pepper
  • ½ Capsicum juliennes
  • ½ Carrot juliennes
  • 2 tbsp Cabbage – shredded
  • 2 sprigs Spring onions , chopped
  • 4 – 5 Garlic cloves
  • 2 Green chillies slit – 2
  • ½ tbsp Soy sauce
  • ½ tbsp Chilli sauce red or green
  • ½ tbsp Oyster sauce
  • ½ tsp Pepper powder
  • 1 tbsp Vinegar
  • 1 tbsp Sesame oil

Instructions
