Prawn and Egg Noodles | Prawn and Noodles Recipe

Stir fry Noodles with Shrimps, vegetables and egg. Perfect for a quick weeknight dinner.

Equipment

  • 1 WOK
  • 1 Frypan

Ingredients
  

  • 200 grams Prawns/Shrimps shelled & deveined
  • 150 grams Noodles boiled as per instructions on the pack
  • 2 Eggs add salt & pepper
  • ½ Capsicum juliennes
  • ½ Carrot juliennes
  • 2 tbsp Cabbage - shredded
  • 2 sprigs Spring onions , chopped
  • 4 - 5 Garlic cloves
  • 2 Green chillies slit - 2
  • ½ tbsp Soy sauce
  • ½ tbsp Chilli sauce red or green
  • ½ tbsp Oyster sauce
  • ½ tsp Pepper powder
  • 1 tbsp Vinegar
  • 1 tbsp Sesame oil

Instructions
 

  • Heat a pan and add a tsp of oil. When the oil is hot, add the beaten eggs to make a thin omelet. Roll the omelet and cut it into strips and set it aside.
  • Next heat another tsp of oil and saute the prawns for a few minutes and then remove.
  • In a wok, add cooking oil. Add chopped garlic and chillies and stir fry for a minute on high heat. Then add the spring onions and continue to stir fry for a minute.
  • Add in the vegetable juliennes and stir fry on high heat. We need to retain the crunch of the vegetables. After about a minute, add in the prawns and the egg omelet strips and continue to stir fry for a minute.
  • Now add the boiled noodles, soy sauce, chilli sauce, oyster sauce, and vinegar. Mix well with the noodles and vegetables. Also, add the pepper powder and then the onion leeks.
  • Combine all the ingredients and top the noodles with a tablespoon of sesame oil for that toasted flavour.
  • Switch off the heat and serve Prawn and Egg Noodles hot.

Notes

  1.  Add condiments as per your taste.
