Pork Bafat Curry with Bafat powder is one of the easiest Pork Curry recipes that you can make. Easy to prepare, yet so delicious, the curry tastes best the next day like most of the pork curry recipes.

Pork Bafat Curry Recipe

The Pork Bafat Curry Recipe has very few ingredients. In spite of this, the curry turns out to be delicious with flavours from the Bafat Powder. Make this curry a day earlier and let the flavours of the spices seep into the meat.

The recipe is just perfect for your parties or get-together as you can cook it a day in advance because this pork curry is tastier the next day.

The curry also tends to thicken after it has cooled down so adjust water accordingly. Let the pork meat cook slowly in the spices to bring out the best flavours, so avoid using a pressure cooker for this recipe. Now let’s go through the ingredients that are so basic and readily available at home.

Ingredients for Pork Bafat Recipe

  • Pork: I used 1 Kg boneless pork (shoulder cut) and cut it into bite-size cubes. Meat with bones also works fine but ensure that the pork has sufficient fat.
  • Bafat Powder: If you are not sure of the perfect Bafat Powder Recipe then don’t hesitate to use the ready Bafat Powder. This has the perfect blend of aromatic spices along with red chilli powder. Bafat powder, just like the East Indian Bottle Masala, is very handy to have at home. It’s versatile and you can cook a variety of recipes with this. Bafat powder is easily available at any General store selling spices and masalas.
  • Onions: Use 4 to 5 medium onions and cut them into cubes. Some like to add this when the pork is halfway cooked. But I prefer to add onions along with the other ingredients in the initial stage. These onions melt during cooking rendering a slightly sweetish taste to the Bafat Curry. Thus balancing the flavours and making the curry more delicious.
  • Ginger, Garlic & Green Chillies. Like any pork recipe, Bafat Curry also has a little more garlic. You can either add them whole or cut them into juliennes. Also, add finely chopped ginger and a few green chillies slit.
  • Whole Spices. Use a few whole spices like bay leaves, peppercorns, cinnamon sticks, and cloves. Though Bafat Powder has the perfect blend of spices, we just add a little of the whole spices to enhance the taste of the dish further.
  • Tamarind and Vinegar. Use both, tamarind as well as vinegar to give the curry a tangy taste. Adjust vinegar to suit your taste.

How to make Pork Bafat Curry (Recipe)

Prep Time: 15 minutes

Serves: 6 persons

Cook Time: 30 to 35 minutes

Step I. Wash the Pork meat and cut it into bite-size cubes or as desired.

Step II. Place the pork meat in the vessel that you want to cook it in. To the meat add onions, ginger, garlic, green chilies, Bafat powder, and then season it with salt. Also, add the whole spices. Then add 1/2 a cup of water and mix well. Now cover the vessel and allow the pork meat to cook until almost done.

Step II. When the pork meat is tender, add tamarind extract and vinegar. Use 2 to 3 tablespoons of vinegar or as per your taste. Let the curry simmer for 4 to 5 minutes and then you can switch off the heat.

Serving Suggestions

This delicious Pork Bafat Recipe can be served as a main course along with peas pulao, steamed rice, sannas, or appams. You could also enjoy this curry with our East Indian Fugias or Wedding Rice.

Ingredients
  

  • 1 Kg Pork cut into cubes
  • 3 tbsp Pork Bafat Powder (readymade)
  • 4 medium Onions cubed
  • 20 cloves Garlic, juliennes
  • 1 inch Ginger, finely chopped
  • 4 Green Chillies, slit
  • 2 Bay leaves
  • ½ tsp Peppercorns
  • 1 inch Cinnamon stick
  • 4 Cloves
  • ½ cup Tamarind extract (lime size ball of tamarind soaked in ½ cup warm water)
  • 3 tbsp Vinegar
  • Salt to taste

Instructions
 

  • Wash and cut the pork meat into bite-size cubes.
  • Place the meat in a deep vessel and add salt, onions, ginger, garlic, green chillies, pork bafat masala powder. Mix well
  • Place the vessel on a medium heat and add ½ cup water. Cover the vessel and cook till done.
  • Now add the tamarind extract and vinegar. Simmer for 4 to 5 minutes and switch off the flame.
  • Serve Pork Bafat Curry with sannas, bread, rice or fugias.

Notes

  1.  I used pork (shoulder) boneless.  Pork with bones is also fine.
  2. Add Pork Bafat powder to suit your spice level.
  3. Adjust tamarind and vinegar as per your taste.
