The gravy is creamy with a rich texture without any cream. Cashew nuts and melon seeds paste along with a little Mawa/Khoya gives the gravy its creamy texture. Basically, the gravy is very mild with rich flavours of spices and herbs. You can enjoy this chicken recipe with butter naan or Rotis.

Ingredients for a recipe with Boneless Chicken Breast

CHICKEN BREASTS. Use boneless chicken breasts and cut them into 1-inch strips. Boneless thigh pieces also work fine for this recipe but I don’t recommend using chicken on the bone.

DRY SPICES. Basic dry ingredients/spices go into this chicken recipe. Spices like Coriander powder, Cumin powder, Turmeric, Garam masala, Red chilli powder, and a little Kasuri methi render flavours needed for this dish.

ONION. One medium finely chopped onion adds volume to this delicious gravy apart from contributing to the taste.

MAWA & MILK. This adds creaminess to the recipe and keeps it moist and delicious. Just a tablespoon and half of Mawa, that is milk solids adds a rich texture to the recipe. You can give it a skip but I recommend including it in the recipe.

GINGER-GARLIC PASTE. Just a hint of ginger-garlic paste as we do not want to overwhelm the mild flavour of the gravy.

TOMATO PUREE. Blanch 2 to 3 large tomatoes and then peel off the skin. Blend them into a smooth paste to get approx. 1/2 a cup of tomato puree. Store-bought tomato puree is also fine.

BUTTER. Add a tablespoon of butter to give the chicken gravy a nice sheen and taste. I used Amul butter for this recipe but any butter is just as fine.

Recipe with Boneless Chicken Breast – How to make it

Prep Time: 10 minutes

Cook Time: 15 minutes

Serves: 4 Persons

STEP I

  • Wash the Chicken Breasts and then cut them into 1-inch strips. Cutting the chicken into strips will ensure faster cooking. Drain the chicken into a colander and set them aside.

STEP-II

  • Prepare a gravy mix with these ingredients and blend well to get a smooth paste –
    • Ginger-garlic paste – 1 tsp
    • Coriander seed powder – 1.5 tsp
    • Cumin powder – 1 tsp
    • Garam Masala powder – 1/2 tsp
    • Tomato Puree – 1/2 cup
    • Turmeric Powder – 1/4 tsp
    • Red Chilli powder – 1.5 tsp
    • Mawa (milk solids) – 1.5 tbsp
    • Milk – 1 cup or approx 200 ml
    • Sugar – 1/2 tsp
    • Salt – 1 tsp
    • Cashew nuts and melon seeds paste (1 tbsp each blended to a smooth paste with a little water)

STEP-III

  • Heat a pan with 3 tbsp cooking oil and add a tsp of cumin seeds. Then add one medium onion chopped and fry until the onion is translucent.
  • Now add in the chicken strips and fry for 2 minutes or until the chicken turns white in colour. Then add the gravy mixture that we made earlier. Mix well, cover with a lid and cook on low to medium heat till the chicken is tender. This will take you approx. 5 to 8 minutes, depending on the heat as well as the chicken.
  • The gravy will slowly thicken by now. Add a tsp of Kasuri methi (dried fenugreek leaves) and a tablespoon of butter. Simmer for a minute and then switch off the heat.

Serving Suggestions

Ingredients
  

  • 300 grams Boneless Chicken cut into strips
  • ½ tsp Cumin seeds
  • 1 medium Onion, chopped
  • 1 tsp Kasuri Methi
  • 1 tbsp Amul Butter
  • 3 tbsp Vegetable OIl
  • Salt to taste

For the Gravy Mix

  • 1 tsp Ginger-garlic paste
  • 1.5 tsp Coriander seed powder
  • 1 tsp Cumin powder
  • ¼ tsp Turmeric powder
  • ½ tsp Garam Masala powder
  • 1.5 tsp Red Chilli powder
  • 1.5 tbsp Mawa/Khoya milk solids
  • ½ cup Tomato Puree
  • 1 cup Milk (approx 200 ml)
  • ½ tsp Sugar
  • 1 tsp Salt – 1 tsp
  • 2 to 3 tbsp Cashew nuts and melon seeds paste 1 tbsp each blended to a smooth paste with a little water
  • ¼ tsp Orange-red colour (optional)

Instructions
 

  • Cut the boneless chicken breast into 1-inch strips. Wash and drain well.
  • Make a gravy mixture with ingredients under 'Gravy Mix' and set aside.
  • Heat a pan with 3 tbsp cooking oil and add cumin seeds. Then add one medium onion chopped and fry until translucent.
  • Now add in the chicken strip and fry for 2 minutes or until they turn white in colour. Then add the gravy mixture that we made earlier. Mix well, cover, and cook on low to medium heat till the chicken is tender.
  • Add a tsp of Kasuri methi (dried fenugreek leaves) and a tablespoon of butter. Simmer for a minute and then switch off the heat.
  • Serve with butter naan or Rotis.

Notes

  1.  Using orange-red colour is optional but it gives a nice hue to the gravy.
  2. Cut chicken into strips for faster cooking.
  3. You could skip the Mawa/khoya, but this gives a rich texture to the gravy.
