Traditional Recipe for Paya Soup (Calde)

Recipe for Paya Soup. This is a traditional East Indian recipe and one of the easiest recipes of Mutton Trotters or Paya Soup that you can make at home. We call this soup ‘Calde’ and you can use this recipe to make a hot and strong Chicken or mutton bone soup too.

Paya soup or bone broth is made from leg bones and hoofs of goat or lamb. It is a rich source of nutrients and minerals and is also considered an immunity booster.

Mutton Paya Soup is specially prepared for elders or the ones who suffer from back pain or joints pain. It is said to bring immense relief when consumed regularly.

If you have elders or young kids in your family, do treat them with a bowl of Paya Soup. If you find the soup strong to serve kids then add some onion and whole spices while boiling the Paya or mutton legs and serve the stock to kids.

What is Paya?

Paya is Goat Trotters. They are leg bones and hoofs of goat or lamb.  Mutton Paya is rich in nutrients and minerals and helps in promoting joint health. This is considered a delicacy not only in India but in most South Asian countries.

Mutton Paya or Goat Trotters are simmered in spices to make ‘Paya Curry’ or ‘Paya Soup’. The chewy bones and the gelatin-like sticky texture of the dish make it delectable. Paya is also largely consumed because of its numerous health benefits.

Health Benefits of Mutton Paya Soup

With my little bit of research, I understand that Mutton Paya or bones contain glucosamine and chondroitin that helps in promoting joint health. Animal bones are also packed with vitamins and nutrients such as magnesium, calcium, and phosphorus.

Animal tissue and bones also contain collagen, which is good for the skin and nails. Collagen when cooked turns into gelatin.

Gelatin provides the body with essential amino acid which is generally associated with muscle building. Studies show that gelatin protects the joint cartilage from regular wear and tear and also helps in the prevention of osteoarthritis.

Amino acids present in the bone broth also aids in digestion. It is extremely beneficial for people with bowel diseases and inflammation. Moreover, amino acids may also promote good sleep.

Considering the health benefits of bone broth, consuming a bowl of Mutton Paya Soup at least once or twice, especially during the winter season is recommended.

How to Make Paya Soup at Home

Prep Time: 15 minutes

Cooking Time: 40 minutes

Serves: 6 persons

STEP-I

  • Preparing the Mutton Paya/Trotters for the Soup. Get the trotters cleaned by your butcher, it’s easier than cleaning at home. Trotters available at supermarkets are generally clean and packed. You still need to wash them thoroughly at home. To do this, add some wheat flour to the trotters and scrub each Paya to get rid of the impurities. Wash the trotters a couple of times under running water until they are squeaky clean.
  • Cut each Paya into 3 to 4 pieces, depending on its size. Then transfer them into a pressure cooker. Add 2 cups of water and salt to taste. Cover the pressure cooker and cook on high flame until the first whistle. After the first whistle, reduce the heat and cook further on low heat for 15 to 20 minutes. Cooking time will also differ on the Mutton Paya/trotters as well as the heat.

STEP-II

  • Making a spice paste. Blend these basic spices in your blender jar, with water, to make a hot and strong spice mix for the soup. This spice mix has ingredients that also have immunity-boosting properties.
    • Coriander seeds – 2 tbsp
    • Cloves – 08
    • Cardamom – 03
    • Cinnamon stick – 2 inches
    • Peppercorns – 1 tsp
    • Turmeric powder – 1/2 tsp

STEP III

  • Preparing the Paya Soup. Roughly crush 10 to 12 cloves of garlic in your mortar and pestle. Then heat 2 tbsp of oil or ghee in a pot and then add the crushed garlic. Fry the garlic for a minute or two and then add the spice paste (Step II).
  • Fry the spice paste for a few minutes until the raw smell vanishes and then add the cooked Paya along with the stock. Add 2 to 3 cups of warm water to make the soup as per your taste. Adjust seasonings accordingly.
  • Allow the soup to simmer for 2 to 3 minutes and then switch off the heat. Serve hot.

Ingredients
  

For Mutton Paya Soup

  • 6 Goat legs or Paya/trotters
  • 10 to 12 Garlic flakes
  • 2 tbsp Oil/Ghee
  • 6 cups Water
  • 1 tsp Salt or as per taste

Spice Mix

  • 2 tbsp Coriander seeds – 2 tbsp
  • 8 Cloves
  • 3 Cardamom
  • 2 inches Cinnamon stick – 2 inches
  • 1 tsp Peppercorns
  • ½ tsp Turmeric powder

Instructions
 

How to Make Paya Soup

  • Wash and cut the Paya (trotters) into 3 to 4 pieces. Put them into a pressure cooker with 2 cups of water and salt. Pressure cook for 15 to 20 minutes.
  • Grind the spices listed under 'Spice Mix' into a smooth paste with a little water.
  • Heat a vessel and add 2 tbsp vegetable oil or ghee and add the crushed garlic cloves. Saute for a minute or two.
  • Add the spice paste and fry for 2 minutes and then add the Mutton Paya along with the stock. Add 3 to 4 cups of water to the soup or add according to your taste.
  • Mix well and bring the soup to a boil. Adjust seasonings to suit your taste.
  • Simmer for 6 to 8 minutes and then switch off the flame.
  • Serve soup hot.

Notes

  1. To wash the Paya – add a few tbsp of wheat flour and scrub each Paya well and then wash them thoroughly a couple of times.
  2. Cooking time will entirely depend on the size of the Paya.  It took me 20 minutes after the 1st whistle as the trotters were small in size.
  3. Add water to make soup as per your taste. You could add 6 cups of water or more.
  4. Adjust seasoning to suit your taste.
