A Simple Chicken Curry Recipe with few ingredients that even beginners can attempt. This Chicken Curry has onions, tomatoes, ginger, and garlic and gets ready in just 30 minutes.

We love our Chicken Curries and especially the ones that are effortless. My Bottle Masala Chicken Curry is one such recipe that I love cooking any time of the week without any effort. Simple curry recipes never disappoint and you can make them with basic spices that are available in your kitchen.

The only ingredient that you may have to go shopping for in this recipe is the ‘Chicken Masala’. You will get a variety of brands of curry powders at the supermarket, buy anyone that is popular. These chicken curry powders or masalas have spices that are very fragrant and aromatic and you will end up with a lip-smacking curry.

There is also no grinding and pounding for this chicken curry recipe, except for the ginger-garlic paste which many of us have ready. You can also go in for readymade ginger-garlic paste but it’s always better to make your own and it’s economical too.

Ingredients for A Simple Chicken Curry Recipe

CHICKEN. The curry is flavourful because I used curry-cut chicken with bones for this recipe. You can also make this curry with boneless chicken but I prefer the bones too because it adds a lot more flavour to the curry.

CHICKEN MASALA/CURRY POWDER. Any brand of Chicken Masala or Chicken Curry Powder is fine. Go ahead and use one of your favourites.

ONIONS, TOMATO, GINGER-GARLIC. To keep this chicken curry simple, I just chop or slice the onions and tomato and use them. Also, I use the ginger-garlic paste that I always keep handy at home. Alternately, you can crush some ginger and garlic cloves in your mortar and pestle and use it for a fresh ginger-garlic taste.

CHILLLI POWDER. I used Kashmiri red chilli powder for this chicken curry. Kashmiri chilli powder is not spicy but renders a bright red colour to the curry. Use any chilli powder you like but adjust the quantity to suit your spice level.

YOGURT/CURDS. Adding yogurt/curds is optional but it gives a nice creamy texture to the curry. Give it a skip if you don’t have it ready with you. You can use greek yogurt or the one available at the milk dairies.

WHOLE SPICES. A few whole spices such as cinnamon sticks, cardamom (both green and black), a few cloves, and bay leaves give the curry an added flavour. Use them if you have them with you or feel free to skip them and substitute them with a little homemade garam masala powder

OIL. Vegetable oil is best to prepare a simple chicken curry recipe.

How to Make A Simple Chicken Curry Step by Step

Step I. Wash the chicken pieces well and set them aside. Slice the onions and chop the tomato. Also, keep the whole spices, ginger-garlic paste, chicken curry powder, and other spices ready.

Step II. Heat vegetable oil in a vessel and add the whole spices and the bay leaves. When the spices begin to splutter, add the onions and fry until they turn golden in colour. Now add the ginger-garlic paste and continue to saute for at least 2 minutes or until the raw smell goes away.

Step III. Add the chopped tomato and saute until it turns soft. Then add the red chilli powder, turmeric powder, and chicken masala or curry powder. Fry this for 2 minutes until it turns into one mass. You may like to add a few tablespoons of water to avoid burning the spices.

Step IV. Now add the chicken curry cut pieces and salt to taste. Mix well on a low flame for 3 to 4 minutes and then add half a cup of yogurt/curds and a cup of water (200 ml). Combine well and then cover the vessel and cook for 15 to 20 minutes or until the chicken is tender.

Step V. Finally, garnish the chicken curry with chopped coriander leaves and switch off the heat.

Serving Suggestions

A Simple Chicken Curry pairs best with steamed rice, or pulao, and a bowl of green salad. You could also serve the chicken curry with naan, parathas, or rotis.

Ingredients
  

  • 1 Kg Chicken curry-cut pieces
  • 2 medium Onions sliced
  • 1 medium Tomato chopped
  • 1 tbsp Ginger-garlic paste
  • ½ tsp Turmeric powder
  • 1.5 tbsp Kashmiri Red Chilli Powder
  • 1.5 tbsp Chicken Masala or Curry Powder
  • ½ cup Yogurt/curds
  • Salt to taste
  • 4 tbsp Vegetable oil
  • 2 tbsp Coriander leaves for garnish

Instructions

  • Add the chopped tomato and saute until it turns soft. Then add the red chilli powder, turmeric powder, and chicken masala or curry powder. Fry this for 2 minutes.
  • Now add the chicken curry cut pieces and well as salt to taste. Mix well on a low flame for 3 to 4 minutes.
  • Add half a cup of yogurt/curds and a cup of water (200 ml). Cover the vessel and cook for 15 to 20 minutes or until the chicken is tender.
  • Finally, garnish with chopped coriander leaves and switch off the heat.

Notes

  1.  Adjust chilli powder and chicken masala/curry powder to suit your taste.
