Recipe for Broccoli Almond Soup

  • First of all, select nice firm brocolli. Break it into small florets, along with the tender stalk, and then soak them in water and wash well before use.
  • In a pan, heat 1 tbsp butter and add chopped garlic and saute for a minute. Now add small chopped onion and saute till the onion is translucent.

  • Put in the brocolli along with its stalk. Add vegetable stock, almonds and then cook till the broccoli is tender. If you do not have vegetable stock ready at home, no worries, just add water, cover, and cook till the broccoli is tender.

  • Puree this with a hand blender or put it into a food processor and blend.
  • Transfer this Brocolli almond puree into the same pan. Now add milk and then season it with salt, pepper, and herbs if using. Also, adjust the thickness of the soup with milk or water to suit your taste.
  • Finally, toast some almonds slivers and add it to the soup.

This delicious and wholesome soup that makes an easy weeknight dinner accompaniment for your family. Quick and easy to prepare this soup is so comforting on a cold winter evening.

Ingredients
  

  • 1 medium Brocolli (cut florets along with stalk)
  • 1 tbsp Butter
  • 4 Garlic cloves, finely chopped
  • 1 small Onion, chopped
  • 1 Bay leaf Optional
  • 10 – 15 Almonds Blend 5 with the brocolli and cut the rest into slivers
  • 2 cups Water
  • 1 cup Milk
  • ½ tsp Pepper powder
  • Salt to taste

Instructions
 

  • In a pan add butter and saute the chopped garlic for a minute. Then add the chopped onion and fry till pinkish in colour.
  • Add the washed and drained brocolli along with the stalks. Cut the stalks into small pieces for quick cooking. Stir for a minute and add 2 cups vegetable stock or water. Add a bay leaf. Cover and cook till done. Let cool
  • Once the brocolli is cooled, remove the bay leaf. Puree this with a hand blender or blend it to a fine paste in a mixie.
  • Transfer this puree into the same pan. Add in the milk and the seasonings. Let it come to a boil.
  • Toast the almonds and cut them into fine strips. Put this slivered almonds into the soup and mix well.
  • Serve hot, garnished with slivered almonds.

Notes

  1.  Adjust the quantity of vegetable stock/water and milk to suit the consistency of the soup.
  2. Add more pepper if you like your soup to be spicy.
  3. Blanch 5 almonds along with the brocolli for the soup.  Cut the rest into slivers and roast on a pan till crunchy.
