Traditional Recipe for Paya Soup (Calde)

Ingredients
  

For Mutton Paya Soup

  • 6 Goat legs or Paya/trotters
  • 10 to 12 Garlic flakes
  • 2 tbsp Oil/Ghee
  • 6 cups Water
  • 1 tsp Salt or as per taste

Spice Mix

  • 2 tbsp Coriander seeds - 2 tbsp
  • 8 Cloves
  • 3 Cardamom
  • 2 inches Cinnamon stick - 2 inches
  • 1 tsp Peppercorns
  • ½ tsp Turmeric powder

How to Make Paya Soup

  • Wash and cut the Paya (trotters) into 3 to 4 pieces. Put them into a pressure cooker with 2 cups of water and salt. Pressure cook for 15 to 20 minutes.
  • Grind the spices listed under 'Spice Mix' into a smooth paste with a little water.
  • Heat a vessel and add 2 tbsp vegetable oil or ghee and add the crushed garlic cloves. Saute for a minute or two.
  • Add the spice paste and fry for 2 minutes and then add the Mutton Paya along with the stock. Add 3 to 4 cups of water to the soup or add according to your taste.
  • Mix well and bring the soup to a boil. Adjust seasonings to suit your taste.
  • Simmer for 6 to 8 minutes and then switch off the flame.
  • Serve soup hot.

Notes

  1. To wash the Paya - add a few tbsp of wheat flour and scrub each Paya well and then wash them thoroughly a couple of times.
  2. Cooking time will entirely depend on the size of the Paya.  It took me 20 minutes after the 1st whistle as the trotters were small in size.
  3. Add water to make soup as per your taste. You could add 6 cups of water or more.
  4. Adjust seasoning to suit your taste.
