Green Masala Chicken Biryani is a recipe made with the freshly ground green masala paste. This Chicken Biryani is a quick recipe that turns out to be very delicious and also has flavours of the fresh green masala.

This Green Masala Chicken Biryani is my mum’s signature recipe and she would make too often since my family loved this. She learnt this recipe from one of her friend years ago when biryanis were not made regularly.

For this Chicken Biryani quick recipe, we firstly cook the chicken in a green masala paste. The chicken is then layered with cooked Basmati rice.

I have a recipe of biryani in which raw chicken is layered and then topped with cooked rice Chicken Dum Biryani. This is one of the biryani recipes that I would like you to try out too.

What I like about this Green Masala Chicken Biryani Recipe is the freshness of the green masala especially, the mint leaves. The green masala along with the other spices also give a distinct flavour to the biryani.

Green Masala Chicken Biryani Recipe

To make the Chicken Biryani, you will need :

  • 1 kg chicken on the bone, cut into big pieces
  • 3 cups Basmati Rice
  • 1 cup yogurt
  • 4 medium onions sliced
  • 2 – 3 medium tomatoes, cut into cubes
  • 1 medium lemon juice
  • Mint leaves for garnish
  • 3 – 4 medium potatoes cut into big pieces and then shallow fry (optional)
  • 1/2 cup oil for cooking
  • Salt to taste

Make a green masala paste and then marinate the chicken with this freshly ground green masala. Besides this green masala paste also add a little turmeric powder and salt to taste. Add one cup of yogurt and let the chicken marinate for at least 30 minutes.

How to make the green masala

  • 1 whole bunch of green coriander leaves
  • 1/2 bunch of mint leaves
  • 2 inch piece of ginger, chopped
  • 1.5 pods of garlic, peeled
  • 8 – 10 green chilles
  • 1 tsp cumin seeds or jeera

In the meantime, grind a few whole spices into a fine powder in a blender.

To make the powdered masala, you will also need:

  • 3 -4 whole red chillies
  • 1/2 tsp peppercorns
  • 6-7 cloves
  • 1-inch piece of cinnamon
  • 7 -8 green cardamom
  • 1 small piece of mace or javitri
  • 1 tsp poppy seeds, khus khus

How to prepare for Chicken Biryani

Boil the Rice:

Take 3 cups of Basmati rice and wash it well and then soak it for 10 to 15 minutes. No need to soak the rice for a longer period as soaking for a lesser time will also yield long grains.

Now boil sufficient water in a large vessel to cook this rice. To the water add salt and a few whole spices such as caraway seeds, peppercorns, cinnamon stick, cloves, and bay leaf. Let the water come to a boil and then add the soaked rice. Cook the rice till it’s 90 percent done, take care not to overcook the rice. Overcooking the rice will ruin the biryani and also your effort in making biryani would be in vain.

Cook the Chicken:

Now since we are making the pakki-style chicken biryani, you will have to cook the chicken first. For this, heat 1/2 cup oil in a large vessel, preferably the one in which you will assemble the biryani.

When the oil is heated add 4 sliced onions and brown it well. When the onions are brown, remove a little onion for garnish.

To the remaining onions, add 2 – 3 medium-sized chopped tomatoes and then saute for a minute. Now add the marinated chicken and the powdered masala, mix well and let it cook on a medium flame till the chicken is done.

Assemble the Green Masala Chicken Biryani:

Now, after the chicken has been cooked, add the juice of a whole lime and then switch off the flame. Sprinkle half of the brown onions reserved for the garnish and also the mint leaves. Also, arrange the fried potatoes over the cooked chicken.

Subsequently, spread the cooked rice on this and spread it well. Pour in half a cup of the saffron dissolved milk all over the rice and also a tbsp of ghee.

Cover this vessel with a tight-fitting lid and then place it on dum for 15 minutes on low to medium flame. You could also place a tawa or gridle under the vessel to avoid too much heat.

Serving Suggestions

Garnish Green Masala Chicken Biryani with some fried onions, cashew nuts, and a few raisins. Serve with yogurt raita or some fresh green salad.

  • ½ cup Oil for cooking

For the Green Masala

  • ½ cup Mint leaves
  • 7-8 Green chillies
  • 1 tsp Cumin seeds/jeera
  • 2 inch Ginger
  • 1.5 pod Garlic

For the Powdered Masala

  • 4 – 5 Red chillies
  • ½ tsp Peppercorns
  • 5-6 Cloves
  • 1 inch Cinnamon Stick
  • 6 – 7 Green cardamoms
  • 1 tsp Poppy seeds, khus khus
  • 1 piece Mace or javitri

Instructions
 

Chicken Biryani Quick Recipe

  • Marinate chicken with yogurt, green masala paste, turmeric powder and salt.
  • Heat oil in a vessel and fry the sliced onions till brown. Remove a little onion and reserve it for garnish.
  • Now add chopped tomatoes and saute for 1 minute.
  • Add the marinated chicken and the powdered masala and fry for 2 -3 minutes. Cook on a medium heat till chicken is done.
  • When the chicken has cooked add the juice of one lemon and half of the onions reserved for garnish. Sprinkle some mint leaves.
  • Heat water in a vessel, add a few spices and salt. When water comes to a boil add the washed basmati rice and cook till 90% done.
  • Now spread this rice over the cooked chicken. Pour the saffron infused milk over the rice and also 1 tbsp of ghee. Cover with a tight fitting lid and place the vessel on dum on low to medium heat for 15 minutes.
  • Garnish with the fried onions reserved for garnish and also with some cashew nuts and raisins.
