East Indian Chicken Vindaloo Recipe

Ingredients.
Minimum and basic ingredients go into this Chicken Vindaloo. It is tangy, spicy and has authentic earthy flavours. You’ll need –

  • Chicken on bone – 1 Kg
  • Dried Red Chillies – (10 Bedki + 4 Kashmiri)
  • Garlic – 20 cloves
  • Ginger – 1 inch (optional)
  • Cumin seeds – 1 tsp
  • Turmeric – 1/2 tsp
  • Vinegar – 1/3 cup
  • Cooking Oil – 1/2 cup
  • Salt – 1.5 tsp or as per taste

Prepare the East Indian Vindaloo Masala.
Blend the red chillies, garlic, ginger, cumin seeds into a smooth paste with vinegar. Add water, if needed.

Prep and Marinate the Chicken
Begin by cleaning and cutting the chicken into curry size pieces so they can evenly absorb the marinade. In a medium bowl, add the chicken pieces, all of the vindaloo masala paste, turmeric powder and salt to taste. Mix well until every piece is well coated in the marinade. Cover and marinate for at least one hour or overnight in the refrigerator.

Cook the Chicken Vindaloo
Now it’s time to get cooking! Transfer the chicken along with the marinade into a cooking pot. Add half a cup of cooking oil and place the pot over high heat for 5 to 6 minutes. Stir everything together so that it combines well before simmering on low heat with a lid on for 15 to 20 minutes. This is where all of the flavor really comes together!

  • 1 Kg Chicken on bone

  • cup Vinegar
  • ½ cup Cooking Oil
  • 1.5 tsp Salt (or as per taste)

Instructions
 

How to make Chicken Vindaloo

  • Make a vindaloo masala paste with dried red chillies, ginger, garlic, cumin seed and vinegar. Add water if needed.
  • Clean and cut the chicken into desired pieces. Add the vindaloo masala paste, turmeric powder and salt and marinate for an hour or overnight.
  • After marination transfer the chicken along with the marinade into a cooking pot. Add half a cup of cooking oil and place on high heat for 5 to 6 minutes.
  • Next reduce the heat and simmer with the lid on for 15 to 20 minutes or until done. Stir occasionally.
  • Once done, check for salt and vinegar and then turn off the heat. Enjoy!

Notes

  1.  Adjust vinegar to suit your taste.
  2. I used palm vinegar, you could also use any store bought vinegar.
  3. Cooking time may differ, so adjust accordingly.
