Chicken Curry Malvani Style

Chicken Curry Malvani Style is a curry recipe from the coastal regions of Maharashtra, Malvan. The curry has an onion and coconut base with authentic Malvani Masala Spice Powder that is so fragrant and aromatic.

I was introduced to this Coconut Curry Chicken by a family friend and ever since then me and my family has been hooked on this recipe. We find ourselves making this curry too often especially on a Sunday for lunch because it is –

  • Easy to prepare Chicken Curry
  • Aromatic and flavourful
  • Uses minimum ingredients
  • Extremely delicious

Like any Indian Chicken Curry, this has a thin gravy and it’s best enjoyed when you pour a ladle full on your plate of rice or dunk your rotis into it.

Let’s go through the ingredients and learn to make this easy chicken curry at home.

Curry Ingredients

  • Chicken. Chicken on the bone works best for any Indian Curry recipe. The juices from the bones enhance the flavour of the curry. Feel free to use boneless chicken if you like.
  • Onion. Chicken curry with onion as a base not only thickens the curry but also adds a sweetish flavour to it. In this recipe we saute onion in the curry and also blend roasted onions and coconut to make a thick curry paste.
  • Coconut. This coconut curry chicken has freshly grated coconut that we roast and blend into a coarse paste with the onions. This gives the curry a lovely earthy flavour.
  • Spices. The only spice mix that we use for this curry is the Malvani Masala. This is a blend of a few spices very similar to the East Indian Bottle Masala. This adds an authentic flavour to any homemade curry, veg or non-veg. I generally use the store-bought masala available easily in any local grocery stores.
  • Oil. Use little extra oil to make this Malvani Chicken Curry as it is traditionally done. The oil floating on the curry also makes it appetizing. The curry is still delicious with less oil too. Use any vegetable oil you like.

How to Make Chicken Curry Malvani Style

This homemade Chicken Curry has a few basic steps and is a quick and easy recipe. With these simple steps, learn How To Make Malvani Style Chicken Curry at Home!

Prep Time: 15 minutes

Cook Time: 20 minutes

STEP IMarinate the Chicken
Marinate 500 grams chicken on the bone with salt and turmeric and set aside for at least 30 minutes or until we get the other curry ingredients ready.

STEP IIRoast Onions & Coconut
Heat 1 tablespoon of oil in a pan and roast 2 sliced onions and a cup of freshly grated coconut until brown. When the coconut and onions have turned golden, turn off the heat and allow it to cool. Once cool, coarsely blend into a coarse paste with a little water.

STEP IIIMaking the Curry
Heat 3 to 4 tablespoon of vegetable oil in a large vessel . Add a few whole spices such as 4 cloves, 1-inch cinnamon stick, and 2 bay leaves. Then add one finely chopped onion and saute until transparent. When onion is transparent add one chopped tomato and continue to saute until tomato softens.

Add Malvani Masala Powder
Now add 2 tablespoon of Malvani Masala Powder, or as per your taste, and fry for a minute. Then add the marinated chicken pieces and mix it well with the spices. Cover the vessel and cook until the chicken is done. This will take at least 10 to 12 minutes, depending on the chicken and the heat. Stir occasionally.

Add Onion-coconut paste.
Now add the onion-coconut paste, we made earlier and mix everything together. Then add warm water approx. 400 ml or just enough to make the gravy you need. Simmer the curry for 4 to 5 minutes or until you see oil floating on the top. Then turn off the heat and Malvani Chicken Curry is now ready to serve. Enjoy!

Prepare Chicken Curry in Malvani Style and serve it with rice Rotis, jowar Rotis, or plain steamed rice. A side dish of any vegetables such as Beans Foogath, Drumstick Foogath. An onion-tomato salad accompanied with some yogurt will give you a wonderful meal time experience. Enjoy!

Ingredients
  

  • ½ Kg Chicken cut into pieces
  • ½ tsp Turmeric Powder
  • 1 tsp Salt
  • 3 tbsp Vegetable Oil
  • Whole spices (2 bay leaves, 1" cinnamon, 4 cloves)
  • 1 medium Onion chopped
  • 1 medium Tomato diced
  • 2 tbsp Malvani Masala Powder (store bought)

Green Paste for Marination

  • ½ cup Coriander leaves
  • 3 Green Chillies
  • 2 inch Ginger
  • 7 to 8 Garlic – 7 to 8 cloves

Onion- Coconut Paste

  • 2 medium Onions sliced
  • 1 cup Freshly Grated Coconut
  • 1 tbsp Oil for roasting

Instructions
 

How to Make Chicken Curry

  • Cut chicken into pieces and marinate with salt, turmeric and 'Green Masala Paste'
  • Heat a tsp of oil in a pan and add sliced onion and coconut and fry until brown. Then transfer into a blender jar and grinder into a slightly coarse paste with water.
  • Heat another vessel and add 3 tbsp oil and whole spices such as 2 Bay leaves, 1-inch Cinnamon Stick and 4 Cloves. Also add one chopped onion and fry until translucent.
  • When onion is translucent, add one chopped tomato and fry until soft.
  • Now add the marinated chicken and mix well. Cover and cook for at least 10 to 12 minutes.
  • Next add the ground onion-coconut masala and also 2 cups of warm water to make the gravy.
  • Cover and simmer for 4 to 5 minutes or until you find oil floating on top.
  • Turn off the heat and garnish the curry with coriander leaves (optional).
  • Serve Malvani Chicken Curry with Rotis or Rice. Enjoy!

Notes

  1.  Use any brand of authentic Malvani Masala Powder for this recipe and adjust the quantity to suit your spice tolerance. 
  2. Add water as per the gravy you need.
  3. Make this curry with chicken on the bone for added flavour.

  1. For the different types of masalas that you are recommending in your recipes, can you please also include how to make them. All of these are not available in the US under the names, eg Malvani Masala Powder

      You will find Malvani Masala in any Indian grocery store. It’s a very popular spice mix. As for the East Indian Bottle Masala in my other recipes, I have a blog post and video indicating the ingredients and procedure. The process is very tedious, so I suggest you buy them from any Indian store. BTW thanks for visiting my blog.

  2. This chicken curry with malvani masala is easy to make. Regarding the spices you have not mentioned quantity of cinnamon cloves and bay leaves. Pl send me details. Regarding onion coconut paste it is 2 onions 1cup coconut. You have added onion after spices can you tell me how many onions to be added in gravy along with tomato. Thank you

      Whole spices – 4 cloves, 1-inch cinnamon stick and 2 bay leaves. For the onion coconut paste – 2 sliced onions and 1 cup of freshly grated coconut.
