Cake Recipes – The 5 Essential Ingredients

Before we dive into the cake recipes, let’s start with the basics. Every cake is built on five essential ingredients. Using high-quality ingredients at room temperature is the key, for a soft and delicious cake with a moist crumb.

  1. Flour: This is the foundation of your cake. All-purpose flour is commonly used, but you can experiment with cake flour or whole wheat flour for different cake textures.
  2. Sugar: Sweetness is key. Castor sugar, granulated sugar, or brown sugar adds sweetness to your cake.
  3. Eggs: They provide structure and moisture to the cake. Eggs act as binders and leavening agents, making your cake rise. For the eggless version, you can add yogurt and a pinch of baking soda.
  4. Butter or Oil: Fats like butter or flavorless vegetable oil ensure a tender, moist crumb.

Christmas Fruit Cake

CHRISTMAS FRUIT CAKE

INGREDIENTS  

  • 200 grams All-Purpose flour/Maida
  • 150 grams of Sugar or Demerara sugar Powdered
  • 200 grams Butter
  • 2 tbsp Vegetable oil
  • 4 Eggs
  • 450-500 grams Mixed fruits and nuts Fruits soaked in ¾ cup Rum or Brandy. Nuts chopped.
  • 1 tsp Spice powder (Nutmeg, Cinnamon & Cloves)
  • 1 tsp Vanilla Essence
  • ½ cup Dark caramelized Sugar *see notes
  • 1 tsp Baking powder
  • Rum or Brandy for feeding the cake, as required.
  • 1 tbsp zest of orange and lime
  • Salt to taste if using unsalted butter

INSTRUCTIONS 

  • Add Baking powder to the flour and sieve three times. Add the nuts and the drained fruits. Mix well.
  • In a mixing bowl, add butter, oil, and sugar and beat till soft and fluffy.
  • Add the eggs one by one and continue to beat.
  • Add Vanilla essence, citrus zest, spice powder, and the liquid, if any, reserved from fruits. Mix well
  • Now add the flour with fruits and nuts and mix gently with a spatula.
  • Pour into a greased baking tin and bake at 160°C for approx. 1½ hour or until a skewer comes out clean.
  • Remove the cake from the tin after 10 min. Prick the cake with a skewer and feed with 1 – 2 tbsp rum. Let it cool on a cooling rack.
  • Cover the cake with marzipan and fondant for a festive look.

Moist Coconut Cake

INGREDIENTS  

  • 1 medium freshly grated coconut (approx. 2.5 cups)
  • 200 grams Sooji/Rava/Semolina
  • 200 grams Sugar
  • 150 grams Butter
  • 4 whole Eggs
  • 1 tsp Baking powder
  • 1 tsp Cardamom, crushed (10 pods cardamom crushed)
  • 1 tsp Rose or Vanilla Essence
  • ¼ tsp Salt (if using unsalted butter)

INSTRUCTIONS 

  • Start by grating the coconut. Break open the coconut and peel off the brown portion. Then cut the coconut into pieces and grind them coarsely, so that it is not too thick or thin.
  • Crack 4 whole eggs into a bowl and set aside.
  • In a large mixing bowl beat butter and granulated sugar with a whisk or an electric beater. Now drop in the eggs one at a time and continue to beat until the mixture is light and fluffy.
  • Now add the grated coconut and semolina/sooji or rava. Mix well with a spatula until it is well incorporated. Do not over-mix. Cover the batter and set aside for at least 4 or 5 hours or overnight at room temperature.
  • The next morning, or after a few hours add in the baking powder, cardamom powder, and essence. Mix everything well and then transfer the batter into a greased or lined baking tin.
  • Preheat the oven to 180 deg C. Place the cake into the preheated oven and bake for 40 to 45 minutes or until the skewer inserted comes out clean.
  • Allow the cake to cool and then slice and serve with your favourite cup of tea or coffee.

Date & Walnut Cake

INGREDIENTS  

  • 200 grams All-purpose flour
  • 200 grams of Powdered sugar
  • 3 Eggs
  • 150 grams Butter
  • 500 grams of Fresh Dates
  • 100 grams Walnuts chopped
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Vanilla Essence
  • 1 cup Hot Water (200 ml)

For the Chocolate Ganache (Optional)

  • 100 grams of Fresh Cream
  • 100 grams Cooking chocolate

INSTRUCTIONS 

  • Add 1 cup hot water and 1 tsp baking soda to the chopped dates and allow it to rest for 10 minutes.
  • Cream butter and powdered sugar with an electric beater or whisk and drop in the eggs one by one. Continue to beat till light and fluffy.
  • Add the chopped and soaked dates and mix well.
  • Now sift the all-purpose flour and the baking powder and add this to the cake mixture. Mix well with a spatula and also add the chopped walnuts.
  • Finally, add the vanilla essence and pour the cake batter into a round baking 9-inch tin.
  • Bake the cake at 180° C for 1 hour and 10 minutes, depending on the temperature of your oven.
  • When the cake is baked and a skewer inserted comes out clean let the cake cool and then unmould.
  • Serve plain or cover the cake with chocolate ganache. This wonderful festive cake is and absolute delight and is sure to impress your family and friends!

Chocolate Ganache

  • Mix the cooking chocolate and the fresh cream and place it over a double boiler till the chocolate melts.
  • Alternately place this in a microwave dish and microwave for 10 to 15 seconds. Allow the ganache to cool and then pour it over the Date and Walnut Cake.

Carrot Cake With Walnuts and Raisins

INGREDIENTS  

  • 2 cups Carrots shredded 3 large carrots
  • 2 cups Flour (1 cup wheat flour + 1 cup all-purpose flour) (1 cup = 120 grams of flour)
  • 1½ cup Sugar (300 grams)
  • 4 whole Eggs
  • 1 cup Vegetable Oil
  • 1 tsp Spice powder (Cinnamon, Cloves & Nutmeg powder)
  • 1 tsp Vanilla essence
  • 1 tsp Baking powder
  • ½ tsp Baking soda
  • ½ tsp salt
  • 75 grams Walnuts or as per your taste
  • 25 grams of Raisins or as per your taste

INSTRUCTIONS 

  • Sift flour and add baking powder and baking soda.
  • Cream the sugar and the eggs. Gradually add oil and beat well.
  • Add the spice powders, vanilla essence, and salt
  • Gently fold in the flour with a spatula. Do not over-mix
  • Lastly add the shredded carrots, walnuts, and raisins.
  • Pour the batter into a 9-inch tin and bake for approx. 55 – 60 minutes, till done.
  • Let the cake cool before serving.

Rum Fruit Cake

INGREDIENTS

  • All-purpose flour – 1.5 cups (200 grams)
  • Demerara Sugar – 1 cup (200 grams)
  • Butter – 200 grams
  • Eggs – 04 whole
  • Rum – 02 tbsp
  • Vanilla Essence – 1 tsp
  • Baking Powder – 1 tsp
  • Spice powder – 1 tsp (cinnamon, cloves & nutmeg)
  • Fruits (Raisins, cherries, tutti frutti, candied peels
  • 50 grams nuts (cashew nuts & almonds)
  • Cake tin – 8 inch

INSTRUCTIONS

  • Cream butter and sugar with an electric beater or a whisk till light and fluffy
  • Add in the eggs one by one
  • Add in all-purpose flour little by little and mix well with a spatula.
  • Now put in the vanilla essence and the rum
  • Add the baking powder and spice mix as well.
  • Mix the batter gently with your spatula.
  • Now add 2 tbsp flour to the fruits and nuts and then add them to the batter.
  • Bake the cake in a preheated oven at 160 degrees C for 50 to 55 minutes or until a skewer inserted comes out clean.
  • Allow the cake to cool and then cut it into slices and serve. A quick cake recipe that you’ll adore.
