When you refer to Tawa Fry, it implies shallow frying. Surmai Tawa Fry is basically Surmai or Seer Fish that is shallow fried on a pan or a Tawa with little oil. Tawa Fry is a popular method of frying fish or vegetables in restaurants or homes.
It is so easy to put this recipe together with simple spices that you will have in your kitchen pantry. We marinate the fish with spices and then shallow fry it on a griddle or Tawa with any vegetable oil. Surmai Tawa Fry is a very popular dish and a most-ordered menu item in any seafood restaurant.

Surmai is Seer Fish and is very popular among fish lovers. And when it comes to fried fish Surmai is the most preferred option. . Surmai is firm white fish, available in India throughout the year. The fish comes in various sizes and the cost of the fish also varies as per the size.
You could use Surmai for a Fish Curry or simply marinate it with some spices and then shallow fry on a Tawa. Whatever way you decide to cook this fish, I am sure you will enjoy every bit of it.
In this post let me tell you how to make Surmai Tawa Fry with simple homemade fresh spices. The spice mix that we use to marinate the fish is extremely flavourful and has only a few ingredients. You will not even need to go grocery shopping for this and you can make amazing fish Tawa fry in the comfort of your home.
Surmai Tawa Fry Recipe
To prepare the Surmai fish for Tawa Fry, we will first marinate it with a few spices. Actually, we marinate the fish twice. First, with some turmeric, salt, and lemon juice for at least 10 minutes.
For the second marination, we use a few spices that are readily available and allow the fish to rest for at least 15 to 20 minutes in the refrigerator. Finally, we place these fish on a Tawa or griddle and shallow fry them on both sides till done.
INGREDIENTS
- FISH – Use any firm white fish, for this Tawa Fry. Mostly preferred by all fish lovers, Surmai makes an excellent Fish Tawa Fry. The fish being firm does not break while frying and is hence used for this recipe. Moreover, it’s delicious too and available easily.
- RED CHILLIES – Use spicy red chillies like Guntur chillies or Bedki chilllies for this recipe. These chillies not only give the required spice to the fish but add colour too. You can add chillies as per your taste and spice level. Feel free to add fresh red chilli powder instead of whole red chillies for this recipe.
- PEPPERCORNS – Apart from using chillies we also add black peppercorns to the spice mix. Do not skip black pepper because this gives the required punch to the spice mix.
- CORIANDER SEEDS – Coriander seeds adds volume to the spice mix. It’s also one of the most fragrant spices that adds flavour to any spice mix.
- LEMON JUICE – Adding lemon juice to this spice mix will enhance the flavour of the recipe. Lemon juice not only removes the fishy smell of the fish but also gives the fish a tangy flavour making it more appetizing.
- CURRY LEAVES – Few curry leaves are blended along with the other ingredients to make a flavourful spice mix. Use fresh curry leaves that have their aroma still intact. The aroma of fresh curry leaves and peppercorns is just irresistable so do not skip this.
How to make Fish Tawa Fry – STEP BY STEP INSTRUCTIONS
- Marinate 3 to 4 Surmai fish slices or any fish of your choice with 1/2 a tsp of turmeric powder, juice of half a lemon, and 1/2 tsp salt. Set the fish aside for at least 10 minutes.
- Then make a Spice Mix for the second marination. Into a blender jar add these spices,
- Dry Red chillies – 04 Nos.
- Peppercorns – 1 tsp
- Coriander seeds – 1 tsp
- Curry leaves – 08 to 10 or as needed
- Salt – 3/4 tsp.
- Make a thick paste with very little water and then apply it all over the fish fillets.
- Allow the fish to marinate for at least 20 to 30 mins in a refrigerator.
- After the marination time is over, remove the fish from the refrigerator.
- Now heat 3 to 4 tbsp of oil in a flat pan or Tawa. Then place the fish slices carefully on the Tawa.
- Let the fish fry for 4-5 mins on one side and then flip over to cook on the other side. Fry for another 3 to 4 minutes on the 2nd side too. Flip over once again if required.
- When the fish slices are well fried on both sides remove them onto a plate and serve hot. Do not over fry the fish.
Serving Suggestions
Make this tasty Surmai Tawa Fry and serve it as an appetizer or a starter. You can also enjoy this as a side dish along with your main course meals.
Surmai Tawa Fry also makes perfect accompaniment with your daily Dal and Rice meals. You could also eat it with chapatis or Rice Rotis.

SURMAI TAWA FRY
Ingredients
- 4 slices Surmai Fish (washed)
- Juice of half a lemon
- ½ tsp Turmeric powder
- ½ tsp Salt
- 3 to 4 tbsp Oil for frying
For the marination
- 4 Dry Red Chillies
- 1 tsp Peppercorns
- 1 tsp Coriander Seeds
- 10 Curry Leaves
- ¾ tsp Salt
Instructions
- Marinate the Surmai slices with salt, turmeric and lemon juice and set aside for 10 minutes
- Make a fine but thick paste of red chillies, peppercorns, coriander seeds, curry leaves and salt.
- Apply this paste on the fish slices and allow to marinate for 20 to 30 minutes in the refrigerator.
- Now heat 3 to 4 tbsp oil in a Tawa and fry the fish on both the sides till done.
- Remove onto a plate and serve hot.
Notes
- Use red chillies as per your spice level.
- I used vegetable oil for frying the fish on a Tawa.
- Use any firm fish of your choice, but I prefer to use Surmai or Rawas.
