Mutton Paya Recipe
Ingredients:
- 4 Mutton trotters (paya)
- 3 tbsp Oil/Ghee
- 1 medium Onion
- 1 tbsp Ginger-garlic paste
- 2 tbsp Nihari masala (readymade – I used Shan Nihari Masala)
- 1 tbsp Red Chilli powder
- 300 ml Water
- Wheat flour slurry (2 tbsp wheat flour + 1/2 cup Water)
- Coriander leaves
- Ginger juliennes
- Green chilies
- Lemon slices
Steps to Prepare Mutton Paya Nihari:
- Wash and clean the mutton trotters thoroughly. Cut them into pieces.
- Heat oil/ghee in a pressure cooker and sauté onion until golden brown.
- Add mutton trotters, ginger-garlic paste, red chilli powder, and nihari masala. Cook until oil separates.
- Add water, cover the pressure cooker, and cook on high flame till 1st whistle. After 1st whistle, reduce the heat and cook for 20 to 25 minutes or until the meat is tender.
- Make a slurry with 2 tbsp whole wheat flour and 1/2 cup water.
- Open the pressure cooker lid once pressure is released. Place on low heat and add the wheat flour slurry. Mix well and simmer for 5 minutes.
- Garnish with coriander leaves, ginger juliennes, lemon slices, and green chilies.
Serving Suggestions
Let the flavors of Mutton Paya Nihari mingle by allowing the dish to rest for some time before serving. Serve hot with naan bread, or any bread of your choice. You can also enjoy this with steamed rice.
