Equipment

  • 1 Pressure Cooker

Ingredients
  

  • 4 Mutton trotters (Paya) cut into pieces
  • 3 tbsp Oil/Ghee
  • 1 medium Onion, sliced
  • 1 tbsp Ginger-garlic paste
  • 2 tbsp Nihari masala
  • 1 tbsp Red Chilli power
  • 300 ml Water
  • Wheat Flour Slurry (2 tbsp wheat flour + ½ cup water)
  • Coriander leaves
  • Ginger juliennes
  • Lemon slices
  • Green chilies

Instructions
 

  • Wash and clean the mutton trotters thoroughly. Cut them into pieces.
  • Heat oil/ghee in a pressure cooker and sauté onion until golden brown.
  • Add mutton trotters, ginger-garlic paste, red chilli powder, and nihari masala. Cook until oil separates.
  • Add water, cover the pressure cooker and cook on high flame till 1st whistle. After 1st whistle, reduce the heat and cook for 20 to 25 minutes or until the meat is tender.
  • Make a slurry with 2 tbsp whole wheat flour and 1/2 cup water.
  • Open the pressure cooker lid once pressure is released. Place on low heat and add the wheat flour slurry. Mix well and simmer for 5 minutes.
  • Garnish with coriander leaves, ginger juliennes, lemon slices, and green chilies.

Notes

  1. Let the flavors mingle by allowing the dish to rest for some time before serving.
  2. Add Nihari Masala to suit your taste
  3. Cooking time will depend on the quality of the mutton paya and also the pressure cooker, so adjust accordingly.
