Ingredients
  

  • 1 Kg Chicken – 1 Kg on the bone
  • 3 medium Onions sliced
  • Whole spices bay leaves, Cinnamon stick, Cardamom -3, Cloves -3, Pepper – 1/2 tsp
  • ½ tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • ½ tsp Garam Masala Powder
  • Salt to taste
  • 3 to 4 tbsp Oil/Ghee

For the Curry Paste

  • 1 cup Coriander leaves
  • ½ cup Mint leaves
  • 6 to 7 Green Chillies adjust to suit your taste
  • 1 inch Ginger
  • 1 pod Garlic about 7 to 8 cloves
  • 1 tsp Cumin seeds
  • 2 to 3 tbsp Grated coconut
  • Juice of 1 lemon
  • Water as needed for the gravy

Instructions
 

  • In a kadai, heat oil and add sliced onions and sauté until deep golden brown. Remove and set aside.
  • In the same pan add the curry paste and sauté for a few minutes until the oil separates from the paste.
  • Now add the chicken pieces, whole spices such as cinnamon stick, cloves 2 -3, peppercorns -1/2 tsp and cardamoms -3. Add salt to taste, turmeric powder,red chilli powder and mix well.
  • Cover the kadai and add 1 cup of water on the cover. After 5 minutes pour the hot water from the cover into the kadai. Also, rinse the mixer jar in which you made the curry paste and add it to the chicken.
  • Cover the pan and let the curry simmer on medium heat for 10 minutes until the chicken is cooked through and tender.
  • Add the fried onions and simmer on low heat for another 5 minutes.
  • Finally add garam masala powder and turn off the heat.
