A Beginner's Guide to Making Indian Chicken Curry at Home

- 1 Kg Chicken - 1 Kg on the bone
- 3 medium Onions sliced
- Whole spices bay leaves, Cinnamon stick, Cardamom -3, Cloves -3, Pepper - 1/2 tsp
- ½ tsp Turmeric Powder
- 1 tsp Red Chilli Powder
- ½ tsp Garam Masala Powder
- Salt to taste
- 3 to 4 tbsp Oil/Ghee
For the Curry Paste
- 1 cup Coriander leaves
- ½ cup Mint leaves
- 6 to 7 Green Chillies adjust to suit your taste
- 1 inch Ginger
- 1 pod Garlic about 7 to 8 cloves
- 1 tsp Cumin seeds
- 2 to 3 tbsp Grated coconut
- Juice of 1 lemon
- Water as needed for the gravy
In a kadai, heat oil and add sliced onions and sauté until deep golden brown. Remove and set aside.
In the same pan add the curry paste and sauté for a few minutes until the oil separates from the paste.
Now add the chicken pieces, whole spices such as cinnamon stick, cloves 2 -3, peppercorns -1/2 tsp and cardamoms -3. Add salt to taste, turmeric powder,red chilli powder and mix well.
Cover the kadai and add 1 cup of water on the cover. After 5 minutes pour the hot water from the cover into the kadai. Also, rinse the mixer jar in which you made the curry paste and add it to the chicken.
Cover the pan and let the curry simmer on medium heat for 10 minutes until the chicken is cooked through and tender.
Add the fried onions and simmer on low heat for another 5 minutes.
Finally add garam masala powder and turn off the heat.
- Adjust green chillies and red chilli powder to suit your taste.
- Fry the chicken in the masala paste to bring out the flavours
- Simmer the gravy until the chicken is well-cooked.
- Add water as needed to make the required gravy
