Caldin | Prawn Curry Recipe

Caldin – This is a very simple and yet amazingly delicious Prawn Curry Recipe with pumpkin/doodhi.

Very few ingredients go into this prawn curry recipe, all ingredients that are readily available in our kitchen pantry. We also use coconut milk as a base for the curry. Besides being a fairly mild and thin gravy it also has a creamy texture because of the coconut milk. A slight zing that comes from the vinegar complements the spices in the curry.

You can use any fish like pomfrets or rawas to make this Caldin recipe. When I make Caldin recipe with prawns I always use pumpkin/doodhi. Moreover, tender pumpkin pieces with prawns and coconut milk make a wonderful combination like they seem to be made for each other. The curry is basically mild with just cumin seed, pepper, turmeric, ginger, and garlic.

This curry is best eaten with steamed rice. You can taste the true flavour of the prawns and you will actually also notice the freshness of the prawns in the curry. The pink colour of the prawns is still intact even after cooking it completely.

During summers you just don’t feel like having any spicy curries you just want to have mild food. This prawn curry recipe with coconut milk and pumpkin/doodhi is your best choice. Have it with a bowl of steamed rice and you will feel content.

Moreover, you don’t have to sweat it in the kitchen because this curry gets ready in minutes. Keep all the ingredients ready, like the coconut milk and the spices and you can then stir up the curry in a few minutes.

Caldin – Prawn Curry Recipe

  • Saute a chopped onion and 4 – 5 slit green chillies in oil and then add the paste of turmeric, ginger, garlic, peppercorns and cumin seeds.
  • Add the pumpkin/doodhi pieces and 1.5 cups of thin coconut milk and cook till the pumpkin is tender.
  • Finally, add the washed and deveined prawns and cook till done. Lastly, add 1 cup thick coconut milk in a dash of vinegar for that extra zing.

Ingredients
  

  • 10 – 15 Prawns washed and deveined
  • 1 medium Pumpkin/doodhi cut into pieces
  • Coconut milk – 1½ cup thin & 1 cup thick coconut milk.
  • 1 medium Onion diced
  • 4 – 5 Green chillies slit
  • 2 – 3 tbsp Oil for cooking
  • Salt to taste

For the paste

  • 1 tsp Cumin seeds
  • ½ tsp Peppercorns
  • 7 – 8 Garlic flakes
  • 1 inch Ginger
  • ¼ tsp Turmeric powder

Instructions
 

  • Heat oil in a vessel and saute the onion and green chillies till onions are translucent.
  • Add the masala paste and fry for a minute, sprinkle water to avoid from being burnt.
  • Add the pumpkin pieces and the coconut milk and let the pumpkin cook till soft. Add salt to taste.
  • Add the prawns and cook for 4 – 5 minutes or till the prawns are well cooked.
  • Finally, add the thick coconut milk and let the gravy come to a boil. Add a tbsp of vinegar and garnish with coriander leaves.
  • Serve with steamed rice.
