Mutton Curry Recipe Maharashtrian style is a very aromatic and delicious mutton curry recipe from Maharashtra.
My house-help, who hails from the Solapur district of Maharashtra, was kind enough to share this recipe for Mutton Curry with me. This is her Traditional Family Recipe and we like to refer to this as Marathi Mutton Rassa.

What I like about this Mutton Curry Recipe is its mind-blowing Aroma. The tantalizing aroma of spices fills my house when this Mutton Rassa Recipe is cooking. I have made this curry a number of times with both mutton as well as chicken and the results were outstanding. But this Maharashtrian Mutton Curry Recipe scored over the chicken curry.

1 Kg Mutton Curry Recipe
MUTTON FOR THE CURRY: 1 kg tender goat mutton to make this wonderful mutton curry. First, boil the mutton in a pressure cooker with salt and turmeric, and then proceed with the next step.
SPICES FOR 1 Kg MUTTON CURRY: A few aromatic spices are needed to bring out the distinct flavour and aroma of the mutton curry.
The spices may look too many, and let this not overwhelm you. These are the common spices generally available in all our garam masala boxes. Try not to skip any of these spices as this is what results in an aromatic mutton curry.
- Spices to be roasted and blended along with the other ingredients
- Coriander seeds – 2 tbsp
- Cumin seeds – 1 tbsp
- Poppy seeds (khus khus) – 1 tbsp
- Sesame seeds (til) – 1 tbsp
- Cloves – 4 to 5
- Mace – 1 petal
- Star anise -1 whole
- Peppercorns – 1/2 tsp
- Cinnamon 2-inch stick
- Bay leaves – 02
- Black cardamom – 01
- Small green cardamom – 03
OTHER INGREDIENTS FOR THE MUTTON CURRY: This is a Mutton Curry with Coconut. You will need dried coconut for a rich mutton gravy but you could also use freshly grated coconut as well.
- Roast 1/2 a cup of dry coconut and 02 medium onions with a tsp of oil in a pan and blend into a smooth paste.
- Add coriander leaves, ginger, garlic, green chillies, and the roasted spices and blend along with the roasted coconut and onions.
- You will also need 1.5 tablespoons of Mutton Masala or any mixed red masala powder for the curry. Alternatively, you could add chilli powder along with some garam masala powder.
How To Make Maharashtrian Mutton Curry – step-by-step instructions

Cook Time : 25 minutes
Serves : 6 persons
STEP I (Boil the mutton)
- First, wash and boil 1 Kg mutton, on the bone, in a pressure cooker with a little salt, ginger-garlic paste, and turmeric powder.
- How many whistles for mutton cooked in a pressure cooker? This depends on the quality of the mutton and also the pressure cooker that you are using. Generally, it takes about 3 to 4 whistles on high heat for a perfectly cooked mutton.
- Alternatively, you could also place the pressure cooker on high heat. After the first whistle reduce the heat and then cook on a low heat for 10 minutes. If the mutton that you are using is not tender then you may have to cook it a little longer.
STEP II (Make a paste of the roasted spices and other ingredients)
- Grind all the spices and the other ingredients in the mixer jar with some water into a smooth paste.
- You will find the ingredients listed above and also in the recipe card below.
Step III
Prepare the Mutton Curry
- Heat 4 – 5 tablespoons of oil in a vessel. Then add 1-2 bay leaves and 1 chopped onion and saute until translucent. Then chop 1 medium tomato and add. Fry until tomato softens.
- Now add the blended masala paste and fry for 2 – 3 minutes or till oil oozes out. This step is important because frying the masala paste will bring out the exotic flavour of the spices and render an aromatic gravy.
- After the masala is nicely fried, add 1.5 tbsp mutton masala or any masala powder that you have and saute for about a minute.
- Next, add the boiled mutton along with all the stock. Use more water if you like to make a thinner gravy.
- Let the mutton curry come to a boil and then reduce the heat. Cook the curry covered for 8 to 10 minutes on low heat or until you see oil on the top. Check for seasonings and finally garnish with coriander leaves. Serve with bhakri, rotis, or steamed rice.
If you are not a mutton lover, or you don’t eat mutton you can still enjoy this aromatic curry with chicken. Simply substitute the mutton with chicken and reduce the spices and the other ingredients for the curry.
For my vegetarian friends – you could use this recipe and make a delicious gravy with mixed sprouts.

Serve this delicious Maharashtrian mutton curry with rice, Rotis, or bhakris and lemon wedges and a bowl of salad. We also love to have this mutton curry with bread or pao.
A bowl of Moong Dal Payasam will make an awesome dessert with this mutton curry meal.
People in Maharashtra love to eat this mutton curry with either jowar or rice rotis called bhakris. Add a sides of fresh onion-cucumber salad and wedges of lemon.

Mutton Curry Recipe | Maharashtrian Style
Ingredients
- 1 Kg Mutton/Lamb, cut into medium pieces
- 1 Onion, chopped
- 1 Tomato, chopped
- 1 -2 Bay Leaves
- 1.5 tbsp Mutton masala or Red Chilly Powder
- 1 tsp Turmeric powder
- Coriander leaves for garnishing
- 4 tbsp Oil for cooking
For the Masala Paste
- 2 tbsp Coriander seeds
- 1 tbsp Cumin seeds
- 1 tbsp Poppy seeds (Khus khus)
- 1 tbsp Sesame seeds (Til)
- ½ tsp Peppercorns
- 4 to 5 Cloves
- 1 inch Cinnamon Stick
- 1 Star Anise
- 4 Cardamoms (1 black & 3 small)
- 2 Bay Leaves
- 1 pc Mace
- ½ cup Dry coconut, cut into slices or grated
- 1 large Onions, Sliced
- 1 Pod Garlic
- 1 inch Ginger
- ½ cup Coriander leaves
- 1 -2 Green chillies
Instructions
- Wash and drain the mutton. Pressure cook with salt, and turmeric powder for 4 – 5 whistles.
- Dry roast all the spices, listed under masala. in a pan. Heat 1 tsp oil and roast the onions and coconut. Grind to a fine paste along with ginger, garlic, coriander leaves and green chilly.
How to make Mutton Curry
- Heat 4 – 5 tablespoons oil in a vessel. Add 1 -2 Bay leaf and 1 chopped onion and saute. Then add 1 medium tomato chopped and fry till it softens.
- Now add the ground masala paste and fry for 2 – 3 minutes till oil oozes out. Add 2 tbsp meat masala or any masala powder and saute for a minute.
- Put in the boiled mutton along with the stock. Use water to make the required gravy. Let this gravy come to a boil. Reduce the flame and cook covered for 5 – 6 more minutes.
- Check for seasonings. Garnish with coriander and mint leaves. Enjoy!
Notes
- This may look like a lot of spices, but all these are easily available in our pantry. These spices give a nice aroma to the gravy.
- You can use freshly grated coconut instead of dried coconut for this mutton curry.
- This is a 1 kg mutton curry recipe and you could also substitute mutton with chicken.
