Stuffed Pomfret |Stuffed Pomfret Fry Recipe

STUFFED POMFRET is a fish fry recipe with a unique stuffing. Generally, we fry fish stuffed with either green masala or red masala paste. But this fish is stuffed with neither green nor red masala. We use a stuffing of onions, tomatoes, green chillies, ginger, pepper powder, and a dash of lemon juice.

Stuffed Pomfret Fry Recipe

This stuffing may seem quite simple and rather unusual for a fish stuffing, but trust me it’s just marvelous. The stuffing is an East Indian way of stuffing and it brings out the taste of the fish.

I remember my younger days when my dad would bring such large pomfrets from the market and mum would then stuff it. The fish was so large that each one of us would get a large chunk of the fish, along with the delicious stuffing. Gone are the days, nowadays you find such small pomfrets. These small pomfrets are not only difficult to stuff but also do not have much flesh on to them. You just don’t enjoy eating them.

Recipe of Pomfret Fry with Stuffing

You will find the internet with lots of recipes for stuffed pomfret. The fish is either stuffed with green masala or the red masala. Not that the green or red masala stuffing is not delicious. But here the taste of the masala is more prominent than the taste of the fish.

When you stuff the pomfrets with this onion filling, you can really relish the taste of the fish. The filling is mildly spiced with only a few green chillies and pepper powder. When you savour the fish along with the stuffing you really get to taste the fish. Pomfrets being mild fish, this stuffing makes an excellent choice. You can also stuff wet Bombay Ducks with this stuffing, you will love it.

How to make Pomfret Fry (with stuffing)

  • Chop 2 medium onions, 3 to 4 green chillies, a small piece of ginger.
  • Into a frying pan add 2 tbsp oil. Put in the onions, green chillies, and ginger and saute till the onions are translucent.
  • Now add one medium chopped tomato and fry until the tomato slightly softens.
  • Add 1/2 tsp turmeric powder and 1/2 tsp red chilly powder or pepper powder. (I prefer pepper powder) . Also, add salt to taste.
  • Finally, add the juice of half a lemon and chopped coriander leaves.
  • Let this filling cool and then stuff it into the fish.
  • Later, heat some oil into a frying pan. Dust the pomfret with flour and shallow fry on both sides till done.
  • To serve, cut along the slits.

Stuffed Pomfret Recipe

A delicious filling stuffed into Pomfret and then shallow fried.
Prep Time 10 minutes
Cook Time 15 minutes

Ingredients
  

  • 2 Pomfrets, clean and make slits on it.
  • 1 Turmeric powder
  • 1 Lemon
  • Salt to taste

FOR THE STUFFING

  • 2 medium Onions, finely chopped
  • 1 tomato chopped
  • 3 to 4 Green chillies, choppes
  • 1-inch Ginger chopped
  • ½ tsp Chilly powder
  • ½ tsp Turmeric powder or pepper powder
  • Juice of half a lemon
  • Salt to taste
  • 2 tbsp Oil for cooking

Instructions
 

  • Marinate the fish with salt, turmeric and lemon juice and set aside for atleast 15 minutes

Prepare the stuffing/filling

  • Heat oil in a pan and saute the onions, green chillies and ginger.
  • When onions are translucent, add one tomato and fry till it softens. Add salt to taste.
  • Now add chilly powder and turmeric powder
  • Add lime juice and coriander leaves.
  • Let the filling cool and then stuff into the 02 pomfrets
  • Heat oil in a frying pan. Dab some flour on the fish and shallow fry till done.

Notes

  1.  The quantity for the stuffing is for two pomfrets.  If you want to stuff only one pomfret then use only one onion and one small tomato.
  2. Dab or sprinkle flour on the fish before frying.  This prevents the fish from sticking to the pan and also gives a nice coat to the fish.
  3. Use either chilly powder or pepper powder to suit your taste.
  4. To serve the fish, cut it along the slits
