Poached Eggs and Spinach Recipe
Poached Eggs and Spinach is the quickest and easiest recipe that you can make on a busy weekday morning. Spinach cooks in a jiffy and also the eggs get poached within minutes.
To make this recipe of Poached Eggs and Spinach firstly, cook the spinach like you would cook any leafy vegetable. Leafy vegetables need to be washed thoroughly under running water to get rid of any sand or dirt. After you wash the spinach, roll the leaves and chop it into 1/2 an inch thickness and set aside.
Now let’s begin with the recipe –
- Heat 2 tbsp oil in a broad pan and saute a few cloves of finely minced garlic. Garlic adds an awesome flavour to spinach hence I recommend that you do not skip it.
- When garlic slightly browns add a finely sliced onion and a few chopped green chillies. Use green chillies to suit your spice level.
- When onions are translucent add spinach leaves and salt to taste. Wash and chop the spinach leaves before you could cook them.
- Cook the spinach in an open pan on a low to medium flame. Do not cover the pan as the spinach will release excessive moisture and also lose its colour. The spinach will take you about 5 to 8 minutes to cook.
- When the spinach is almost cooked, dry up any extra moisture and then crack the eggs and drop them one by one over the bed of spinach. Sprinkle some salt and pepper over the eggs. Also, add in the cubed tomato at this stage.
- Now cover the pan with a lid and allow the eggs to cook completely. If you love half poached eggs then switch off the flame when the eggs are done as per your liking.

- 4 whole Eggs
- 1 bunch Spinach Leaves
- 1 medium Onion
- 1 medium Tomato cubed
- 3 Garlic cloves
- 3 Green Chillies
- 1 tsp Pepper powder
- Salt to taste
- Oil/butter for cooking
Instructions
- Wash and chop the spinach leaves and set aside.
- Heat oil/butter in a pan and add the minced garlic and saute for 30 seconds.
- Add the sliced onions and green chillies and saute till the onions are translucent.
- Once the onions are translucent add the washed and chopped spinach leaves and also add salt to taste.
- Let the spinach cook in an open pan on a medium heat
- Once the spinach is done, this will take you about 5 to 8 minutes, dry up all the moisture released by the spinach.
- Now crack the eggs one by one on the spinach. Sprinkle some salt and pepper on the eggs and add the cubed tomato. Cover the pan and allow the eggs to cook.
- Once the eggs are perfectly poached, switch off the flame.
