Poached Eggs and Spinach makes an excellent breakfast recipe. This is full of wholesome protiens and minerals that will energixe you throughout the day.

- 4 whole Eggs
- 1 bunch Spinach Leaves
- 1 medium Onion
- 1 medium Tomato cubed
- 3 Garlic cloves
- 3 Green Chillies
- 1 tsp Pepper powder
- Salt to taste
- Oil/butter for cooking
Wash and chop the spinach leaves and set aside.
Heat oil/butter in a pan and add the minced garlic and saute for 30 seconds.
Add the sliced onions and green chillies and saute till the onions are translucent.
Once the onions are translucent add the washed and chopped spinach leaves and also add salt to taste.
Let the spinach cook in an open pan on a medium heat
Once the spinach is done, this will take you about 5 to 8 minutes, dry up all the moisture released by the spinach.
Now crack the eggs one by one on the spinach. Sprinkle some salt and pepper on the eggs and add the cubed tomato. Cover the pan and allow the eggs to cook.
Once the eggs are perfectly poached, switch off the flame.
- Use a broader pan to cook the eggs and spinach.
- Cook the eggs to suit your taste.
