How to Make One-Pot Chicken Curry

1. Add all the ingredients

In a heavy-bottomed cooking pot, add the bone-in chicken, sliced onions, ginger, garlic and also the green chillies.

Add the potatoes and chopped tomatoes along with the East Indian Bottle Masala, Kashmiri red chilli powder, cinnamon, cardamom, cloves and pepper.

Add salt to taste and also pour in the cooking oil. You are free to adjust the amount of oil as per your liking..

2. Mix everything together

Give everything a good mix so that the chicken, onions and tomatoes are well coated with the spices and oil.

That’s the beauty of this recipe — there is no need to fry the onions separately or prepare a masala paste.

3. Cook the chicken

Place the pot on the stove and cook over medium heat. Cover and allow the chicken to cook, stirring occasionally.

As the chicken cooks, the onions and tomatoes release their moisture and combine with the spices to form a delicious curry gravy.

Continue cooking until the chicken and potatoes are completely cooked and tender. This should not take more than 20 to 25 minutes on low to medium heat.

4. Adjust the consistency

If you prefer a thinner gravy, add a little hot water and simmer for a few more minutes.

Taste and adjust the salt if required. Finally garnish with fresh coriander leaves.

Tips for the Best Chicken Curry

Use bone-in chicken: It gives the curry more flavour besides producing a richer gravy.

Don’t rush the cooking: Allow the chicken to cook properly so that the onions and tomatoes have time to break down and blend with the spices.

Adjust the chilli: East Indian Bottle Masala can vary in heat. Adjust the quantity of Kashmiri chilli powder according to your preference.

Don’t add too much water initially: The onions and tomatoes will release moisture as they cook. You can always add more water later if you want extra gravy.
