Mutton and Pumpkin Curry Recipe or Mutton Lonvas is one of the most popular East Indian Curry Recipes.
We love to make this Mutton curry with pumpkin and spice it up with the East Indian Bottle Masala. The curry is so mild and creamy because of the addition of coconut milk. It also has a slight tang that comes from the use of tamarind juice.
You could also make Mutton, Beef, and Prawns Lonvas and use vegetables like pumpkin, cabbage, radish, turnips. The curry gets ready in minutes and is mild and delicious too and loved by the seniors as well as the kids in the family
How to make Recipe of Mutton and Pumpkin Curry (Mutton Lonvas)
Let’s go through the ingredients list, and then know how to make this recipe:
- Boiled Mutton – 1/2 kg
- Pumpkin cut into pieces – 1/2 kg or one medium size
- Bottle Masala – 3 tbsp (add to suit your taste)
- Coconut Milk – 1 cup
- Tamarind juice – 1/4 cup
- Garlic cloves smashed – 10 to 12 (or one large whole pod)
- Oil for cooking 3 tbsp
- Salt to taste (approx 1 tbsp level)

How to Cook Mutton
For this recipe, you will need to cook mutton in a pressure cooker first. You could cook mutton on a stovetop in a vessel too. But for tender succulent mutton, I highly recommend using the pressure cooker. This is the best way to cook mutton moreover, it saves time too.
FAQ: How much time to cook mutton in Pressure Cooker
To cook 1/2 kg of mutton in a pressure cooker add 1 cup of water and salt to taste (as we need more stock for this recipe I add 2 cups of water). Cover the pressure cooker with its lid and then place it on a high flame.
After the first whistle, lower the flame and then cook mutton on a low to medium flame for 8 to 10 minutes. The cooking time depends on your pressure cooker and also the mutton quality.
Open the lid of the pressure cooker only after all the steam has escaped. The mutton is now cooked and ready for the recipe.
How to Cut Pumpkin for Mutton and Pumpkin Curry Recipe
To make this recipe we need a medium-sized long white pumpkin. First, cut the long pumpkin into 4 or 5 equal sizes diagonally and then peel all the pieces with a potato peeler or a knife. Cut each piece vertically into 6 or 4 depending on the size of the pumpkin.
After you cut the pumpkin into the desired pieces, keep them immersed in a bowl of water to avoid oxidation.
We prefer to use large pieces of pumpkin in this mutton curry recipe to keep them firm while cooking in the curry.
How to extract coconut milk at home
For this recipe, you could also use ready-made coconut milk or coconut milk powder. But nothing beats the homemade coconut milk that is quick and easy to make.
Take half a cup of coconut and add a cup of water into a blender and then blend it for a minute. Pour this into a muslin cloth or a fine sieve and squeeze out the liquid as much as you can. You can then use this coconut milk for the mutton and pumpkin curry recipe
You can add the coconut remains once again into the blender and blend it with half a cup of water to get thinner coconut milk if you like.
How to Get Tamarind Juice
To get tamarind juice, simply take a small ball of tamarind about the size of a small lemon. Soak this tamarind into quarter cup of warm water and let it rest for 5 to 10 minutes. Then squeeze out the pulp and discard the tamarind to get tamarind juice.
You could also use the readymade tamarind pulp for this recipe but keep it homemade since we are making this mutton and pumpkin curry the traditional way.
Add tamarind juice to the curry only after the vegetables have been cooked. If added earlier, it will hinder the cooking process.
How to Smash Garlic
Peel a few cloves of garlic and then put them into a mortar and pestle and roughly crush them. Do not use a blender for this, as the blender will cut the garlic and not smash them. Instead, press each garlic clove with a thick knife on your chopping board, if you do use a mortar and pestle.
We saute the mutton and pumpkin curry with smashed garlic in oil. This releases the flavour of the garlic in hot oil thus making the curry flavourful.
If you need to peel large quantities of garlic, immerse them in warm water for a few minutes and you will then find the skins peeling off faster.

How to make the Recipe
- Cook the mutton in a pressure cooker till done.
- Extract Coconut Milk, if using fresh coconut.
- Extract tamarind juice
- Cut pumpkin into desired pieces
- Now heat 3 tbsp oil in a vessel and add the smashed garlic cloves and let it fry for a minute.
- Next, add the bottle masala or mutton masala and saute for 30 sec and then add the pumpkin pieces
- Also, add the cooked mutton along with the stock and cover the vessel to let the pumpkin cook.
- Once the pumpkin has cooked, add the tamarind juice and also coconut milk.
- Cover the vessel once again and let the mutton and pumpkin curry simmer for 2 minutes.
- Switch off the flame.
Serving Suggestions
Mutton and Pumpkin Curry (Mutton Lonvas) is a main course dish. You could serve this with steamed rice, Rotis, or the East Indian Fugias.

- Cook mutton in pressure cooker with 2 cup water.

- Extract tamarind juice by soaking a small ball of tamarind into 1/4 cup warm water.
- Extract coconut milk by blending 1/2 cup coconut with 1 cup water.

- How to Make the Recipe
- Heat 3 tbsp oil in a vessel and add the smashed garlic. Saute for one minute.
- Add the Bottle Masala or Mutton Masala powder and stir for 30 seconds on low heat.
- Now add the pumpkin pieces and the cooked mutton along with the stock. Cover the vessel and cook till the pumpkin is tender.
- Add the tamarind juice and also the coconut milk.
- Let the mutton and pumpkin curry simmer for 2 minutes and then switch off the flame.
- Serve with steamed rice or Rotis.
Notes
- Adjust bottle masala and tamarind to suit your taste.
- Add Mutton masala if you do not have bottle masala.
- The best way to cook mutton is in a pressure cooker.
- Cut pumpkin as per your choice but keep the pieces a little bigger to avoid it getting overcooked.
