About Kardi Fish
Kardi, are small baby prawns or shrimps that are generally light pinkish in colour. They have a very fine shell or skin that is generally discarded. Kardi Fish is available in abundance in Mumbai throughout the year.
To prepare the Kardi prawns for cooking you will first need to clean them by discarding the head and tail of each prawn carefully. Also, the fine legs need to be removed. Though this is time-consuming, it is worth the effort. You could even ask the fingermonger to do this for you as they are apt at it. The baby shrimps/prawns are then gently washed in clean water and ready for cooking. They have a mild prawn flavour and hence need minimum spices to bring out their exquisite taste.
Since these Kardi prawns are found in plenty, the fishermen preserve them by drying them in the hot sun. There is a great demand for dried prawns during the monsoon season when fresh fish is not available. Dried Kardi prawns are also another much-loved seafood delicacy. I’ll share the recipe for Kardi Dry Fish in another post.
