Ingredients for Easy Chicken Biryani recipe.

  • Chicken. You can use boneless chicken for this recipe as it cooks faster. I personally prefer to use chicken on the bone because it makes the biryani more flavourful.
  • Potatoes. If you like potatoes in the biryani then I recommend that you fry them separately. I like to fry my potatoes in the air fryer but you could also fry them in a pan. Cook potatoes until 80 to 90% done only and then finish off in the biryani.
  • Onions. You will need to fry the onions until golden brown (barista). Fried onions give an authentic flavour to the biryani. Fry the onions in the same pot or vessel in which you will be making the chicken biryani. You could then use the same oil for cooking the biryani, making it more flavourful.
  • Herbs and Spices. Use ginger garlic paste, chilli powder, turmeric powder and Biryani Masala powder. You will also need a few whole spices such as cardamom, cinnamon, cloves, black cumin seeds and peppercorn. I also like to add fresh herbs, such as mint leaves and coriander leaves along with some slit green chillies. Mint leaves gives authentic flavour to any biryani.
  • Yogurt. Try to use natural yogurt from the dairy or make your own yogurt at home. The yogurt should not be too sour. Do not use the packaged yogurt as it won’t add any flavour to your chicken biryani.
  • Rice. Basanti rice is a perfect choice for a good biryani. Soak the rice for at least 10 to 15 minutes before cooking. Soaking rice also ensures longer grain.
  • Oil/Ghee. I like to use oil and sometimes a combination of oil and ghee.

How to Make Easy Chicken Biryani for 6 Persons

Start by marinating the chicken and then cooking the rice. Let’s learn how to make this Easy Chicken Biryani step by step at home that will serve six persons.

Step I – Fry potatoes
We love potatoes in our Biryani. Apply salt and turmeric to the potatoes and then fry them until they are 90% done. You could also air fry the potatoes for 8 to 10 minutes.

Step II – Fry Onions
In a thick bottom vessel or pot, heat oil, and fry onions until light golden brown. Once the onions have caramelized remove them onto a plate and allow them to cool. When cool crush them with your fingers.

Step II – Marinate the Chicken.
Now, when the oil in the vessel is still hot, turn off the heat and add the whole spices and the bay leaves. Now add ginger-garlic paste, Chilli powder, Turmeric powder, and Biryani Masala Powder. Then add the chicken pieces and salt and mix well.

Also add in the lemon juice with some mint leaves, coriander leaves, and slit green chillies. Give all this a mix and allow the chicken and the spices to marinate for at least an hour.

Step IV – Soaking Basmati Rice.
Wash and soak basmati rice in water for at least 10 to 15 minutes. Also, the time of soaking depends on the rice, you can check the packet for instructions.

Step V – Cooking the Rice.
Now start boiling water for the rice along with some whole spices. When the water comes to a rolling boil, add the rice and cook until 80 to 90%. You must keep an eye on the boiling rice because you do not want to ruin your biryani with overcooked rice. Once the rice is done, strain it in a colander and set aside.

Step VI – Layering the Biryani.
Assuming that the marination time is over add the onions, that we fried and crushed earlier, to the marinated chicken. Now top the chicken with fried potatoes and some more mint and coriander leaves. Finally, spread the cooked basmati rice over the rice.

To complete the layering, pour saffron-infused milk over the rice. Also, add a tablespoon of ghee along with some mint, coriander leaves, fried onions and cashew nuts.

Step VII – Cooking the Biryani on Dum.
Close the vessel with a tight-fitting lid. If the lid is not tight enough, use some silver foil and place the lid over it. Alternatively, seal the vessel with dough and then place the lid. Then place this vessel over a high flame for 5 to 6 minutes. Place a Tawa underneath the vessel and then lower the heat to medium-low and cook for another 30 to 35 minutes.

In a total of 35 to 40 minutes, your Chicken Biryani will be done and your entire house will be engulfed in its wonderful aroma. You can then turn off the heat. Your Chicken Biryani is ready!

Easy Chicken Biryani Recipe for 6 Persons

Ingredients
  

  • 1 Kg Chicken on the bone
  • 3 Potatoes, cut and fried
  • 750 grams Basmati Rice soak for 10 to 15 minutes
  • ½ cup Oil for frying onion and for chicken
  • Whole spices (1-inch cinnamon, bay leaves, 2 green cardamom, 3 cloves, 1/2 tsp pepper corn, 1/2 tsp sahijeera)
  • ½ cup Warm milk with a few saffron strands (add a little food colour, if you like)

For the Chicken Marination

  • 5 medium Onions, sliced and fried till golden Barista
  • 2 tsp Ginger Garlic paste
  • 1 tbsp Red Chilli powder
  • 2 tbsp Biryani Masala (I used readymade)
  • ½ tsp Turmeric powder
  • ½ cup Yogurt
  • Salt to taste
  • 1 cup Mint leaves and coriander leaves
  • 2 tbsp Lemon juice
  • Whole spices (1-inch cardamom, 2 black cardamoms, 4 cloves, 2 bay leaves)

Instructions
 

  • Wash and soak basmati rice in water for at least 10 to 15 minutes.
  • Apply salt and turmeric and fry potatoes until 80 to 90% cooked and set them aside.
  • Next, proceed to marinate the chicken. In a thick bottom vessel heat oil and fry onions until golden brown. Once the onions have caramelized remove them onto a plate. Switch off the flame now
  • When the oil is still hot, add the whole spices and also one or two bay leaves. Now add ginger-garlic paste, Chilli powder, Turmeric powder, and Biryani Masala Powder. Add the chicken pieces and salt and mix well.
  • Also add in the lemon juice with some mint leaves, coriander leaves, and slit green chillies. Give all this a mix and allowed the chicken and the spices to marinate for at least an hour.
  • now boil water for the rice along with some whole spices. When the water comes to a rolling boil, add the rice and cook until 80 to 90%.
  • Reserve a little onion for garnishing and crush the balance onions with your fingers. Add this to the marinated chicken and mix. Now top the chicken with fried potatoes and some more mint and coriander leaves.
  • Finally add the cooked rice and spread it evenly.
  • Pour in some saffron-infused milk over the rice. Add a tablespoon of ghee over the rice along with some mint leaves and fried onion.
  • Cover the vessel with a tight-fitting lid. If the lid is not tight enough, use some silver foil and place the lid over it. Alternatively, seal the vessel with dough and then place the lid.
  • Place the vessel over a high flame for 5 to 6 minutes. Then lower the flame to medium-low and cook for 15 minutes.
  • Finally set the flame to the lowest and cook for the final 20 to 25 minutes.
  • In a total of 35 to 40 minutes, your Chicken Biryani will be done. Your Chicken Biryani is ready. Enjoy!

Notes

  1.  Add biryani masala as per instructions on the pack.
  2. Seal the vessel with a tight-fitting lid or some dough.  Don’t let the steam escape.
  3. Add whole spices as per your choice
  4. Yogurt must be mildly sour.
