How to Make Chicken Soup at Home
Ingredients:
- Chicken – 400 to 500 gms (curry cut with bones)
- Garlic – 2 pods (approx. 20 cloves)
- Salt – to taste
- Water – 500 ml or as needed for soup
- Ghee – 1 tbsp
Spices to be Blended:
- Coriander seeds – 1 tbsp
- Peppercorns – 1 tbsp
- Cardamom – 2
- Cinnamon stick – 2 inches
- Cloves – 3 to 4
- Turmeric – 1/4 tsp (Tip: I prefer adding turmeric powder directly to avoid staining my mixer while blending.)
Method:
- Prepare the Spice Blend:
- Blend the spices into a fine powder using a spice grinder or blender. Add 2 to 3 tbsp water and blend to a paste. Set aside.
- Cook the Chicken:
- Heat 1 tbsp of ghee in a deep pot. Add the mashed garlic and fry for a minute or two. Add chicken pieces and sauté for a few minutes until they are lightly browned.
- Add the Spices:
- Add the prepared spice blend over the chicken. Mix well to coat the pieces evenly.
- Add turmeric powder (if not added while blending spices) and salt to taste.
- Simmer the Soup:
- Pour 500 ml of water into the pot. Stir well and bring the soup to a gentle boil.
- Reduce the heat to low, cover, and let it simmer for 25-30 minutes or until the chicken is tender and the flavors are well combined.
- Serve:
- Ladle the hot chicken soup into bowls. Enjoy it on its own or with a side of crusty bread or steamed rice.
