Chicken Soup Clear | Traditional Calde

Clear Chicken Soup with immunity boosting spices that not just comforting but nutritious too.

Ingredients
  

  • 400 - 500 gms Chicken curry cut with bones
  • 2 pods Garlic approx. 20 cloves
  • 1 tsp Salt
  • 500 ml Water or as needed for soup
  • 1 tbsp Ghee

Spices to be blended

  • 1 tbsp Coriander seeds
  • 1 tbsp Peppercorns
  • 2 Cardamom
  • 2 inches Cinnamon stick
  • 3 to 4 Cloves
  • ¼ tsp Turmeric can be added to the pot while cooking.

Instructions
 

Prepare the Spice Blend

  • Blend the spices into a fine powder using a spice grinder or blender. Add 2 to 3 tbsp water and blend to a paste. Set aside.

Cook the Chicken

  • Heat 1 tbsp of ghee in a deep pot. Add the mashed garlic and fry for a minute or two. Add chicken pieces and sauté for a few minutes until they are lightly browned.

Add the Spices

  • Add the prepared spice blend over the chicken. Mix well to coat the pieces evenly.
  • Add turmeric powder (if not added while blending spices) and salt to taste.

Simmer the Soup

  • Pour 500 ml of water into the pot. Stir well and bring the soup to a gentle boil.
  • Reduce the heat to low, cover, and let it simmer for 25-30 minutes or until the chicken is tender and the flavors are well combined.

Serve

  • Ladle the hot chicken soup into bowls. Enjoy it on its own or with a side of crusty bread or steamed rice.

Notes

  1. Use chicken with bones for a nutritious soup. 
  2. Adjust water as needed.
  3. Add pepper and salt as per taste.
