How To Make Carrot Cake With Wheat Flour
Bake a moist and delicious Carrot and Date Cake with this easy to follow recipe. It has whole wheat flour, fresh carrots, crunchy walnuts and sweet dates!
Preheat your oven and prepare the pan.
Start by pre-heating your oven to 180°C. Grease a 6-inch round cake pan with oil or butter and line the bottom and sides with parchment paper.
Mix the dry ingredients.
In a medium bowl, sift 150 grams (1 cup + 2 tbsp) of whole wheat flour. Also, add 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1 teaspoon cinnamon powder and 1/4 teaspoon salt. Mix well and set aside.
Combine the wet ingredients in a bowl.
In a separate bowl, whisk together 1/2 cup of vegetable oil, 1/2 cup of brown sugar, 2 large eggs, and 1 teaspoon of vanilla extract.
Add in one cup of finely chopped pitted dates and chopped walnuts with the wet ingredients until just combined. Grate two medium-sized carrots (about 1.5 cups) and then add to the liquid ingredients.
Mix in the dry ingredients.
In to the liquid ingredients add half the quantity of the sifted whole wheat flour mixture. Combine well and then add the remaining wheat flour. Gently fold the dry ingredients into the wet ingredients until combined. Do not overmix. Your batter is not ready for baking!
Bake the Carrot and Date Cake.
Pour batter into prepared pan and bake at 180°C for 35-40 minutes or until a skewer inserted into the center comes out clean. Allow the cake to cool before slicing and serving.

Tips for a Healthy Carrot and Date Cake
- Use wheat flour (regular chapati atta) and sift the flour a couple of times for a fluffy cake.
- Do not over-mix or over-bake the cake. Baking time may differ depending on the oven temperature so adjust accordingly.
- Use unflavoured vegetable oil such as sunflower or canola.

- Add in finely chopped pitted dates and walnuts with the wet ingredients and mix until just combined.
- In to the liquid ingredients add sifted whole wheat flour mixture. Gently fold into the wet ingredients until combined.
- Pour batter into prepared cake tin and bake at 180°C for 35-40 minutes or until a skewer inserted into the center comes out clean.
- Allow the cake to cool before serving.
Notes
- Do not over mix the cake batter.
- You can substitute brown sugar with caster sugar
- Use regular whole wheat flour used to make chapatis. Sift the flour at least 3 times.
- Add a teaspoon of spice mix for added flavour
