Dry Ingredients
- 150 grams Whole wheat flour
- 1 tsp Cinnamon powder
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- ¼ tsp Salt
- ½ cup Chopped dates
- ½ cup Walnuts chopped
- 1½ cups Grated carrots
Wet Ingredients
- ½ cup Oil (Sunflower or Canola)
- ½ cup Brown Sugar
- 2 Eggs
- ½ tsp Vanilla essence
How to make carrot cake with wheat flour
In a medium bowl, sift whole wheat flour, baking powder, baking soda, cinnamon powder and salt.
In a separate bowl, whisk together vegetable oil, brown sugar, eggs, and vanilla extract.
Add in finely chopped pitted dates and walnuts with the wet ingredients and mix until just combined.
In to the liquid ingredients add sifted whole wheat flour mixture. Gently fold into the wet ingredients until combined.
Pour batter into prepared cake tin and bake at 180°C for 35-40 minutes or until a skewer inserted into the center comes out clean.
Allow the cake to cool before serving.
- Do not over mix the cake batter.
- You can substitute brown sugar with caster sugar
- Use regular whole wheat flour used to make chapatis. Sift the flour at least 3 times.
- Add a teaspoon of spice mix for added flavour
