Vegetable Noodles Stir Fry – I make this so often that it’s now become a part of my family recipe.

The day you feel too lazy to cook these veg noodles stir fry can come to your rescue. It’s a one-pan meal that makes a wonderful and easy weeknight dinner for your family.

Use whole-wheat noodles along with loads of vegetables and a bowl of a wholesome meal is ready. Add some proteins to the vegetable noodles stir fry and it will make your complete meal.

Ingredients for Vegetable Noodles Stir Fry

NOODLES: Boil noodles as per instructions on the pack. Cook noodles al dente for best results. Use good quality hakka noodles only.

VEGETABLES: Cut vegetable juliennes and set aside. Use any vegetables of your choice but cut them into juliennes. Mushrooms also tastes wonderful in a stir fried dish. I did not add them this time because I did not have them handy. Also finely chop ginger, garlic, and chillies. Use chillies to suit your taste.

SAUCES: Use good quality soy sauce and chilly sauce and oyster sauce. I do not recommend the sauces that you get along with your restaurant delivery order. Always stock soy and chilly sauce in your refrigerator to stir up quick meals, like this.

How to make Noodles Stir fry in 3 simple steps

  • STEP – I. In a wok, add oil, ginger, garlic, onion, and saute it for a few minutes. Then add the vegetables one by one and stir fry on a high flame for a minute or two.
  • Step – II. Add in the sauces and saute for a few moments, taking care not to burn. You can use any stir fry sauces of your choice. I prefer to use soy and chilly sauce most of the time. Oyster sauce also gives a wonderful flavour to the noodles and I prefer to add a little. You could omit it if you wish to. Some people also like the taste of tomato sauce in stir fry but I prefer not using it for its sweet taste.
  • Step-III. Finally the cooked noodles and seasonings like pepper powder and salt. After the noodles are done, you may like to add some sesame oil to enhance the flavour of the noodles. I love the taste of sesame oil in any stir-fry dishes. Garnish Vegetable Noodles Stir Fry with some chopped onion leeks.

Ingredients
  

  • 1 packet Hakka Noodles
  • 1 Carrot cut into juliennes
  • 5 – 6 strings Beans cut into juliennes
  • 1 Capsicum cut into juliennes
  • 2 -3 sprigs Spring Onion chopped, keep the leeks separately
  • 2 Dried Red Chillies, broken into 2.
  • 1" Ginger, finely chopped
  • 4-5 cloves Garlic, finely chopped
  • 2-3 Green Chilles diced
  • 1 tbsp Vegetable Oil
  • 1 tsp Sesame Oil
  • 1 tbsp Soya Sauce
  • 1 tsp Chilly Sauce
  • 1 tsp Oyster sauce optional
  • Salt to taste

Instructions
 

  • Cook Noodles, as per instructions on the pack. Cook it al dente to get the best results.
  • In a wok, add a tbsp of oil, let it heat well and then add garlic, ginger and spring onions and saute for a minute.
  • Now add all the vegetables and stir fry on high flame.
  • Add the sauces, pepper powder and salt to taste.
  • Add the boiled noodles and 1 tbsp of sesame oil and stir-fry.
  • Garnish with spring onion leeks.

Notes

  1. To give your wok a non-stick coating.  Add 1 tsp of oil and spread it well with a kitchen tissue.  Heat the wok till you see fumes.  Switch off the flame.  Now wipe this oil with a tissue when the wok cools down.  Your wok is now ready.  
  2. Sesame oil enhances the flavour of the stir-fry dishes.  You may choose to omit.
  3. Always stir-fry on high flame.
