If you’re looking for an easy chicken fry recipe, then this one is for you! It’s simple to make, and it takes less than half an hour to cook. You can use any type of chicken you prefer, so feel free to experiment with a different flavour.
Simply great for parties as a starter or after a hard day of work as a side dish with your main course meal. Enjoy the chicken as a starter, dry up all the liquid left in the pan after cooking. If serving it as a side dish, switch off the heat once the gravy thickens. You can then serve it with Rotis or Chapatis.
A simple way to give the chicken fry a tandoor flavour is to smoke it before or after it is done. Even without the smoky flavour the chicken fry is just awesome.
The recipe is so simple with basic ingredients available at home. The only time spent is for marinating the chicken which you can do a day ahead and refrigerate. Once the marination is complete you can relax till the time you want to cook it. The chicken gets ready in just 20 to 25 minutes once you place it on heat, it’s that simple and quick.

How to Make A Quick Chicken Fry
Prep Time: 10 minutes
Cook Time: 25 minutes
Serves: 6 persons
The recipe involves marinating chicken pieces with yogurt/curds and basic spices and then cooking in a pan till the gravy dries up. The chicken is then given a smoky flavour by using the live coal method.
Step I. Marinate the Chicken
- Start by marinating 1 kg chicken pieces. For this recipe, you could use chicken on the bone or even boneless chicken. We prefer using chicken on the bone because the juices in the bones impart flavour to the dish.
- Wash the chicken well and drain the water completely. Make a few slits on the thicker parts of the chicken to let the marinate penetrate into it.
- Marinate the chicken overnight or for at least an hour if you are short of time. This will ensure quick cooking and succulent pieces of meat.
- Ingredients for marination –
- Chilli powder – 1 tbsp
- Turmeric powder – 1 tsp
- Cumin powder – 1 tsp
- Ginger-garlic paste – 2 tbsp
- Green chillies – 2 slit
- Cloves – 2
- Cinnamon – 1 inch
- Pepper powder – 1 tsp
- Curds/yogurt – 2 cups
- Food colour (orange-red) – 1/4 tsp (mixed in a few drops of water)
- Salt to taste
Step II. Cook the Chicken
- Heat 3 to 4 tbsp of oil in a Kadai or broad pan. Now add in the marinated chicken and fry for a few minutes. After 5 minutes, cover the vessel and let the chicken cook till almost done and the oil starts oozing out.
- This will be a semi-gravy chicken fry. If you need a dry chicken fry, reduce the liquids by cooking on high heat without the lid.
- Add roasted Kasuri Methi for flavour. If you like a smoky effect, just like the tandoor, then place live coal in the center of the vessel. Drop in a teaspoon of ghee or butter and immediately cover the vessel when the coal begins to smoke. Remove the coal after 5 minutes and give the chicken a stir.
Tips for a Perfect Chicken Fry Recipe
Marinate the chicken for a minimum of half an hour to 8 hours. This will render succulent chicken pieces and reduce the cooking time too.
If your chicken is not so tender, then you may need to brine it for a couple of hours. To brine chicken, add 2 to 3 tbsp salt to a liter of water and immerse the chicken into it for a couple of hours. You could add a few herbs and lemon to the brine. Refrigerate the chicken with the brine for a couple of hours for the best results.
Serving Suggestions
Serve quick Chicken Fry as a Starter or Appetizer during family get-togethers. Since this is a quick recipe, it will save you precious time.
You could use this Chicken Fry Recipe as a chicken side dish too and serve it with rotis or chapatis. When the chicken is cooked and the gravy has been reduced you could switch off the heat at this stage.
Leave a little gravy in the Chicken Fry and layer it with some fried onions, mint, and coriander leaves, and then top it with basmati rice. Cover the vessel and place it on a Tava on low heat for 10 to 15 minutes. Your delicious Chicken Tikka Biryani is ready.
