However, the lemon juice in this recipe balances the spice.

Chicken Liver Fry – Ingredients
The recipe is so quick and simple and gets done in under 25 to 30 minutes. There is no need to boil Chicken Liver before frying and also no need for any marination for this recipe. Yet the end result is a most delicious, tender, and flavourful Chicken Liver Fry that is perfectly spiced.
This is what you will need for the recipe –
- CHICKEN LIVER. I used a pack of 450 grams. You can cut them into small pieces but I just like to separate them from their joints. Wash the chicken liver a couple of times and allow the water to drain. You will have to handle the chicken liver carefully to avoid it from breaking.
- ONION. Since we are making a simple fry recipe, we need to add only one medium onion. Adding more onions will give you a gravy like texture which we are not looking for in this recipe.
- GINGER, GARLIC & GREEN CHILLIES. Generally, I like to keep my recipes simple and not overpower them with strong flavours. For this reason I do not add ginger-garlic in this recipe but you can be free to do so.
- BOTTLE MASALA. This is an East Indian Spice Mix that we use in most of our recipes. This spice mix contains about 28 to 30 spices. If you don’t have bottle masala then you can use any spice mix that you like.
- GARAM MASALA POWDER. If using homemade Garam Masala Powder, you will need only a small quantity, like half a tsp. But if you have the store-bought Garam Masala powder then you may need at least a tsp because it is generally milder.
- LEMON JUICE. Add juice of half a lemon or a dash of vinegar to finish off the recipe. This will give you a tang that will compliment this spicy Chicken Liver Fry Recipe.
How to make Chicken Liver Fry
- Heat a pan or a Kadai and add 2 tbsp vegetable oil. Then add one sliced onion and saute until the onion turns translucent.
- Now add a tbsp of bottle masala or any spice mix that you have at home. Fry the onion and spice mix for a minute.
- Then add the washed and drained chicken liver, salt to taste and the green slit chillies. Continue to fry all this for a minute.
- Add 1/4 cup water to cook the liver. Cover the vessel and cook on a medium to low flame for 8 to 10 minutes or until the chicken liver is tender.
- Add 1/2 tsp of homemade garam masala powder and the juice of half a lemon.
- Finally garnish this spicy Chicken Liver Fry with some fresh coriander leaves.

- 1 medium Onion sliced
- 3 to 4 Green chillies slit
- ½ tsp Ginger-garlic paste (optional)
- 1 tbsp Bottle Masala/Curry Masala
- ½ tsp Garam Masala Powder
- Juice of half a lemon
- Salt to taste
- 2 tbsp Oil for cooking
- Coriander leaves for garnish

- Use any flavourful masala powder that you have.
- You can add a tbsp of vinegar instead of lemon juice.
