Chicken Stew with Coconut Milk
The Chicken Stew recipe is the same as the mutton stew recipe but with an addition of coconut milk. Adding coconut milk to the stew makes it creamier and tastier and a favourite with kids.
What I like about this chicken stew is that it gets ready in minutes and you don’t have to spend hours in the kitchen. This is a perfect recipe for busy weeknight dinners.
Finally, loads of freshly crushed peppercorns add a burst of flavour and spice to the stew. Vegetables can be of your choice, but carrots, potatoes, and green peas make a better option.
How to Make Chicken Stew with Vegetables
Let’s learn how to make this simple Chicken Stew recipe with vegetables. A quick recipe that you’ll enjoy making very often. Grab your apron and let’s go through the ingredients
Ingredients for Chicken Stew
- CHICKEN – Chicken on the bone adds a lot of flavour to this stew. Feel free to use boneless chicken too.
- ONIONS – Regular red onions add a depth of flavour and volume to the stew. Chop them finely for this chicken stew.
- GINGER, GARLIC & GREEN CHILLIES – Add finely chopped ginger, garlic, and green chillies or simply crush them in a mortar and pestle and add.
- WHOLE SPICES – Fry a few whole spices such as cinnamon sticks, cardamom, and cloves before you add the onions. Letting the spices fry for a few seconds releases its flavour and yields a flavorsome stew.
Vegetables for Chicken Stew
You could also add any vegetables of your choice to the Chicken Stew. French beans and mushrooms also taste wonderful in any stew recipe.
Notwithstanding this, the quantity as well as the number of vegetables depends on your choice, add more if you like.
The vegetables that go well with this Chicken Stew are –
- French beans, cut into 1-inch pieces
- Carrots, cut length-wise or into rounds as desires
- Green Peas, fresh or frozen works fine
- Potatoes, cut into desired cubes
How to Make Chicken Stew
- Firstly, take 500 grams of chicken pieces and add a teaspoon of salt, and let it rest for at least 10 to 15 minutes.
- Then in a pan add 3 tbsp oil, and put in a few whole spices like a cinnamon stick, cardamom, and cloves. Let the spices fry for a few seconds and then add two medium finely chopped onions.
- Also add 7 – 8 chopped green chilles, and 1-inch ginger, 2 to 3 cloves garlic and fry till the onions are translucent.
- When the onions are translucent, then add in the chicken pieces and the turmeric powder and mix well.
- Fry the chicken pieces for about 4 – 5 minutes and then add the vegetables like carrots, potato, and green peas and mix well.
- After you mix the vegetables and the chicken, add one cup of coconut milk. Let the chicken and the vegetables cook. This should take you approximately 10 – 15 minutes.
- Let the chicken stew simmer for a few more minutes and then add in the pepper powder, garam masala powder, and lemon juice. I prefer to add a lot of pepper powder to the stew as this gives a wonderful flavour to the stew.
Serving Suggestions
Serve Chicken Stew as a main course meal with hard-crust bread or steamed rice. Makes a perfect lunch or dinner recipe with some sides such as Mutton Chops or Cutlets

Ingredients
- 500 grams Chicken on the bone add 1 tsp salt and set aside
- 1 inch Cinnamon stick
- 3 – 4 Cloves
- 2 medium Onions, finely chopped
- 1 inch Ginger, chopped
- 7 – 8 Green chillies, chopped
- 1 Carrot, cut
- 1 Potato, diced
- 1 cup Green peas
- 1 cup Coconut milk
- 1 tsp Pepper powder
- ½ tsp Garam masala powder
- Juice of half a lime
- 3 tbsp Oil for cooking
- 1 tsp Salt, or to taste
Instructions
- Heat oil in a pan and add cinnamon stick and cloves. Add the chopped onions and fry till transclucent. Also add the chopped green chillies and giner.
- When onions are translucent, add the chicken pieces and turmeric powder. Fry for 4 -5 minutes.
- Now add the carrots, potato and green peas and mix well. Add coconut milk and let the chicken cook well along with the vegetables. Adjust the salt.
- After the chicken is cooked add the pepper powder, garam masala powder and juice of half a lime. Let the stew simmer for 2 -3 minutes and then switch off the flame.
Notes
- You can add mutton instead of chicken. But cook the mutton in a pressure cooker with some salt and then add to the onions.
- If you find that the coconut milk has curdled, add a tsp of cornflour to half a cup of water and pour it into the stew.
- After you add the vegetables, adjust the salt. Add more if required.
