1. Whole Chicken Roast
INGREDIENTS
- 1 whole Chicken with skin approx. 1.5 kgs
- Seasonings like oregano or any herbs
- Butter for basting the chicken
Ingredients for the Stuffing
- 2 medium Onions chopped
- 7 – 8 Green Chillies diced
- 1″ piece Ginger Chopped
- 4 sliced Bread croutons
- 100 grams Chicken liver boiled and diced optional
- 100 grams Sausages and bacon
- 1 Carrot par-boiled and cubed
- 1 cup Green peas par-boiled
- Mushrooms or any vegetable of your choice
- 1 tbsp Raisins
- 2 tbsp Cashew nuts
- Juice of half a lemon
- ½ tsp Pepper powder
- ½ tsp Garam Masala powder
- Salt to taste
INSTRUCTIONS
- Wash and pat dry a whole chicken.
- Apply lemon juice, seasonings, and salt to the chicken and marinate for 2 – 3 hours in the refrigerator.
- Heat 1 tbsp oil in a pan and then fry the raisins and cashew nuts and remove. Then add Onions, chillies and ginger and saute.
- Add Sausages, Bacon and chicken liver and fry for a minute
- Next, add boiled vegetables, salt, pepper powder, and garam masala. Mix well
- Finally, add bread croutons, lemon juice, raisins, cashew nuts, and coriander leaves. And then let cool.
- Stuff the filling into the cavity of the chicken and then secure with thread.
- Finally, roast chicken in a pre-heated oven at 190°c for 1 hour 15 minutes.
2. Chicken Fingers
INGREDIENTS
- 200 grams Boneless chicken
- 1 tbsp Butter
- 2 – 3 Green Chillies
- 1½ tbsp Maida/All-purpose flour or substitute with whole-wheat flour
- 1 cup Milk at room temperature
- 1 Bread slice grind to make fresh bread crumbs
- 1 Egg (separate the yolk and egg-white)
- ½ tsp Pepper powder
- ½ tsp Oregano or any herb of your choice
- ½ tsp Chilli flakes optional
- Dried bread crumbs for coating
- Salt to taste
INSTRUCTIONS
- Cook chicken on low flame with salt and grind coarsely in a food processor.
- Melt butter in a pan, add chopped green chillies and maida and then fry for a minute. Add milk to make a thick sauce. And then let it cool.
- Add the chicken paste, bread crumbs, egg-yolk, pepper powder, oregano, chilli flakes and also the salt and shape them into finger shapes.
- Dip the chicken fingers in egg white (mix a tbsp of water and beat) and then roll into dried bread crumbs and shallow fry. Alternatively, chicken fingers can also be deep-fried till golden.
INGREDIENTS
- 1 Kg Potatoes Boiled and mashed
- ½ Kg Mince Chicken, Beef or Mutton
For the mince filling
- 3 medium onions finely diced
- 6 – 7 pcs green chillies finely chopped (use as per your spice level)
- 1 inch pc ginger finely chopped
- ½ tsp garam masala powder *see notes
- 1 tsp pepper powder
- 3-4 sprigs coriander leaves chopped
- Mint leaves optional
- 1 medium lemon extract the juice
- salt to taste
For frying the chops
- 2 eggs beaten with 1 tbsp water and a little salt
- 1 – 2 cups bread crumbs
- Oil for shallow frying
INSTRUCTIONS
- Boil potatoes in a pressure cooker, peel and mash when still warm cover and set aside
- For preparing the filling, heat oil in a vessel and saute the onions, chillies and ginger till onions are translucent.
- Add the mince, salt and mix well. Cover and cook on low flame for approx. 15 min. When done dry up the liquid if any and add the garam masala powder, lemon juice and coriander leaves. Set aside to cool.
How to make Potato Chops
- Firstly, grease the palm of your hands with oil. Then take a big lemon sized ball of the mashed potato and flatten it with your fingers creating a small disc. Then add a tbsp of the mince filling and cover it all over, taking care not to let the filling spill out. Finally, shape it into a round and slightly flatten with the palms of your hand.
- Similarly prepare all the potato chops and set aside covered with a kitchen towel.
Frying the chops
- Place the bread crumbs and beaten eggs in two separate bowls.
- Dip the chop in beaten egg and then the bread crumbs and set aside. Similarly make a batch of 5 to 6 chops at a time.
- Now heat oil in a pan and then shallow fry the potato chops on medium flame to give it a nice golden glow.

4. Air Fryer Chicken Drumsticks
INGREDIENTS
- 6 Chicken drumsticks (wash and pat dry)
- 1 tbsp Olive oil
- 1 tsp Garlic flakes or powder
- 1 tsp Dried herbs (as per choice)
- ½ tsp Smoked Paprika or Chilli powder
- 1 tsp Salt
INSTRUCTIONS
- Wash and dry the chicken drumsticks and give them a few slits.
- Next, marinate with olive oil, garlic powder, mixed herbs, paprika and salt. You can also air fry them immediately.
- Pre-heat the air fryer as per the instructions.
- Place the marinated chicken drumsticks in the air fryer basket and then set the temperature to 190° for 25 minutes.
- After 13 to 14 minutes, flip over the drumsticks and continue air frying for another 10 to 11 minutes or until done.
- Finally, serve with potato wedges
