Ingredients
For the Mutton Curry
- 1 kg mutton
- 3 medium onions, sliced
- 2 medium tomatoes, sliced
- 2 tbsp yogurt (curds)
- Juice of half a sour lime
- 1 tbsp salt (or to taste)
- 3 tbsp oil
For the Green Masala Paste
- Mint leaves – 1 small bunch
- Coriander leaves – 1 small bunch
- Garlic – 1 whole pod
- Ginger – 2-inch piece
- Green chillies – 5 to 6
- Sesame seeds – 1 tbsp
- Poppy seeds – 1 tbsp
Dry Spice Powders
- ¾ tbsp red chilli powder
- 1 tbsp coriander powder
- ½ tbsp cumin powder
- ¼ tsp turmeric powder
- ½ tsp homemade garam masala powder
- ½ tsp pepper powder
Whole Spices
- 1 bay leaf
- 1-inch cinnamon stick
- 1 black cardamom
- 1 star anise
- 1 piece mace
How to Make Pressure Cooker Green Mutton
Step 1: Prepare the Green Masala
Grind mint leaves, coriander leaves, garlic, ginger, green chillies, sesame seeds, and poppy seeds into a smooth paste using a little water if needed. Keep aside.
Step 2: Sauté the Aromatics
Heat oil in a pressure cooker and then add bay leaf, cinnamon, black cardamom, star anise, and mace. Sauté for a few seconds until fragrant. Then add sliced onions and cook until they turn light golden brown.
Step 3: Add Tomatoes & Spices
Add sliced tomatoes and cook until they soften and blend well with the onions. Next, add turmeric powder, red chilli powder, coriander powder, cumin powder, and pepper powder. Make a paste with these powders before adding them to the onion-tomato mixture. Mix well and cook for a minute or two, or until the oil separates.
Step 4: Cook the Mutton
Firstly, marinate the mutton pieces with salt, green masala paste, and sour lime juice. Add the marinated mutton pieces. Cook on medium heat for 5–7 minutes until the mutton releases its juices.
Step 5: Add Curds
Next, add the curds or yogurt. Mix thoroughly and cook for another 2–3 minutes until the oil starts to separate slightly.
Step 6: Pressure Cook
Add enough water for the gravy (as required). Close the lid and pressure cook for 4–5 whistles or until the mutton is soft and tender.
Step 7: Finish & Serve
Once the pressure releases naturally, proceed to open the cooker. Add pepper powder and also garam masala powder. Simmer for a few minutes so as to adjust the consistency.
Garnish if desired and serve hot.
