Pressure Cooker Green Masala Mutton (Soft, Flavorful & Easy)

Ingredients
  

For the Mutton Curry

  • 1 kg mutton (bone-in)
  • 3 medium onions sliced
  • 2 medium medium tomatoes sliced
  • 2 tbsp yogurt/curds
  • Juice of half a sour lime
  • 1 tbsp salt or to taste
  • 3 tbsp oil for cooking

For the Green Masala Paste

  • Mint leaves – 1 small bunch
  • Coriander leaves – 1 small bunch
  • 1 pod Garlic
  • 2 inch Ginger
  • 5 to 6 Green chillies
  • 1 tbsp Sesame seeds
  • 1 tbsp Poppy seeds

Dry Spice Powders

  • ¾ tbsp red chilli powder
  • 1 tbsp coriander powder
  • ½ tbsp cumin powder
  • ¼ tsp turmeric powder
  • ½ tsp homemade garam masala powder
  • ½ tsp pepper powder

Whole Spices

  • 1 bay leaf
  • 1- inch cinnamon stick
  • 1 black cardamom
  • 1 star anise
  • 1 piece mace

Instructions
 

Step 1: Prepare the Green Masala

  • Grind mint leaves, coriander leaves, garlic, ginger, green chillies, sesame seeds, and poppy seeds into a smooth paste using a little water if needed. Keep aside.

Step 2: Sauté the Aromatics

  • Heat oil in a pressure cooker. Add bay leaf, cinnamon, black cardamom, star anise, and mace. Sauté for a few seconds until fragrant. Then add sliced onions and cook until they turn light golden brown.

Step 3: Add Tomatoes & Spices

  • Add sliced tomatoes and cook until they soften and blend well with the onions. Now add turmeric powder, red chilli powder, coriander powder, cumin powder, and pepper powder. Make a paste with these powders before adding them to the onion-tomato mixture. Mix well and cook for a minute or two, or until the oil separates.

Step 4: Cook the Mutton

  • First, marinate the mutton pieces with salt, green masala paste, and sour lime juice. Add the marinated mutton pieces . Cook on medium heat for 5–7 minutes until the mutton releases its juices.

Step 5: Add Curds

  • Add the curds or yogurt. Mix thoroughly and cook for another 2–3 minutes until the oil starts separating slightly.

Step 6: Pressure Cook

  • Add enough water for the gravy (as required). Close the lid and pressure cook for 4–5 whistles or until the mutton is soft and tender.

Step 7: Finish & Serve

  • Once the pressure releases naturally, open the cooker. Add pepper powder and garam masala powder. Simmer for a few minutes to adjust the consistency.
  • Garnish if desired and serve hot.

Notes

  1. Cooking mutton in a pressure cooker renders soft and succulent mutton pieces. 
  2. Adjust spices and chillies to suit your taste.
  3. Add salt as needed.
  4. Cooking time will depend on the quality of the meat, heat and also the pressure cooker.
