Palak Chicken Recipe, also known as Spinach Chicken, is a delicious and healthy Indian dish where tender chicken pieces are cooked in a rich, flavorful spinach-based gravy. Ingredients for Palak Chicken or Spinach Chicken Recipe:
For the Spinach Puree:
- 1 bunch spinach (palak)
- 1/4 cup coriander leaves
- 1/4 cup mint leaves
- 4 to 5 green chillies
- 2 to 3 tbsp water (for blending)
For the Chicken Curry:
- 500 gms chicken, (curry cut pieces)
- 3 tbsp oil
- 1/2 tsp cumin seeds
- 1 bay leaf
- A few whole spices (like 3 cloves, 1 black cardamom, 2 green cardamom, 1-inch cinnamon, few peppercorns)
- 1 medium onion, chopped
- 1 tbsp ginger-garlic paste
- 1 medium tomato, chopped
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp red chilli powder
- Salt to taste
- 1/4 cup water (for rinsing the blender jar)
- 1/2 tsp garam masala powder
- 1/2 tsp roasted kasuri methi (dried fenugreek leaves)
- 1 tsp butter (optional, for added sheen)
- Juice of half a sour lime
Spinach Chicken Curry or Palak Chicken Recipe
Prepare the Spinach Puree
- Add the spinach leaves to a steamer, cover, and steam for 5 to 6 minutes.
- Once cooled, transfer the spinach to a blender jar.
- Add coriander leaves, mint leaves, green chillies, and then blend into a smooth paste with 2 to 3 tbsp water. Set aside.
Cook the Chicken
- Heat oil in a pan and then add cumin seeds, bay leaf, and whole spices. Stir for 30 seconds or until fragrant.
- Add chopped onions and fry until translucent.
- Stir in the ginger-garlic paste and sauté for a minute.
- Add chopped tomato and cook until it softens.
- Mix in turmeric powder, coriander powder, and also red chilli powder. Sauté for a minute.
- Add chicken pieces and salt to taste and then sauté for 2 to 4 minutes on medium heat.
- Cover and cook for 10 to 12 minutes until the chicken is tender.
Combine Spinach with Chicken
- Now add the prepared spinach puree and then mix well.
- Next, rinse the blender jar with 1/4 cup water and add it to the pan.
- Cover and simmer for another 5 minutes to allow flavors to blend.
Final Touches
- Finally, add roasted kasuri methi and garam masala powder.
- For a glossy texture, also add a teaspoon of butter (optional).
- Squeeze in the juice of half a sour lime, mix well, and then serve.
