Lamb or Mutton Stew with Coconut Milk – a delicious recipe with Mutton and Coconut Milk. Tender pieces of lamb (mutton) simmers in rich creamy coconut milk with fresh vegetables and fragrant spices.

This creamy and aromatic Lamb Stew with Coconut Milk pairs well with a bowl of steamed rice, chitaps (rice dosa), or appams. This makes a perfect midday meal that is nutritious and delicious too. But if you are not a fan of Coconut Milk then you must try out Mutton Stew with Vegetables. A traditional stew without coconut milk and lots of vegetables.

About this Lamb or Mutton Stew

For this recipe, we cook tender lamb or mutton pieces in creamy coconut milk. Minimum spices in this do not compromise with the flavours of the mutton stew. The recipe still turns out to be fragrant and delicious.

We like to use a lot of fresh vegetables such as beans, carrots, green peas, potatoes. But the key here is not to overcook the vegetables but retain a little crunch in them. Imagine crunchy veggies and succulent mutton pieces simmering in rich creamy coconut gravy, it’s oh so tempting.

To flavour the lamb or mutton stew we add homemade Garam Masala Powder that is extremely aromatic. This garam masala powder has only 4 spices but is so fragrant and retains its aroma till the end. We finally finish off the recipe with lemon juice/vinegar and a generous amount of black pepper powder.

Recipe Ingredients

  • Mutton. Using mutton on the bone ensures a flavourful stew curry. Go ahead and use boneless mutton for this recipe incase you do not enjoy mutton with bones. As we are not using a pressure cooker to make this mutton stew, buy mutton that is tender so that it cooks easily in a pot.
  • Coconut Milk. You will need approx 300 ml of fresh coconut milk to cook 500 grams mutton with vegetables. To make 300 ml coconut milk, add 300 ml water to 1 cup grated coconut and blend. Transfer this into a muslin cloth and extract the coconut milk. If you find this tedious, then you may like to use the store bought coconut milk.
  • Onions. We use red onions that are locally available and slow fry them. These onions add a little sweetness to the stew that is most desireable and also enhances the taste.
  • Ginger, Garlic & Green Chillies. Crush them roughly and use this paste to make the stew. Otherwise, you could use ginger garlic paste and add a few green chillies, slit.
  • Spices. The whole spices such as cloves, cinnamon, and cardamom add flavour to the stew. Spice-mix or homemade garam masala powder and pepper powder adds spice and aroma.
  • Fresh vegetables – There are seasonal vegetables such as green peas, carrots, beans. Use vegetables as per your choice. Winter melon or ash gourd also tastes wonderful in the stew and so does potatoes.

How to make Mutton Stew (Indian Style)

Time needed: 50 minutes

  1. Heat a large pot.

    Add vegetable oil to a pot and then add a few whole spices. When the spices splutter add the crushed ginger, garlic, and chillies and fry for a few minutes.

  2. Add finely chopped onions

    Saute the onions until they turn translucent. There is no need to brown the onions completely for this stew.

  3. Add Mutton pieces

    Once the onions are translucent add the mutton pieces. Also, add salt to taste and half a teaspoon of turmeric powder. Fry the mutton pieces along with the onions for at least 2 minutes.

  4. Cook the meat

    Now cover the pot and cook the mutton until done. This should take approx. 30 to 35 minutes depending on the meat as well as the cooking heat.

  5. Add Vegetables

    When the mutton is cooked add the vegetables, garam masala powder, and coconut milk. Cover the pot once again and allow the vegetables to cook.

  6. Simmer the stew

    After the vegetables are cooked, it’s time to finish off the mutton/lamb stew with a generous dash of black pepper powder. Also, add lemon juice or vinegar to taste and finally add the remaining coconut milk. Simmer the stew for 2 minutes and then switch off the flame.

What to eat with Lamb Stew?

Enjoy Lamb or Mutton Stew with plain steamed rice. You can also have it with simple dosas, neer dosas, or East Indian Chitaps. If you a not a fan of rice, then you can also eat some crusty bread with this lamb stew.

How much is Mutton per Kilo?

Locally, mutton is referred to as goat meat. In Mumbai mutton is Rs. 640/- per kilo (October 2021). The rates may vary in other states in India, depending on the demand and supply.

Which Mutton is best?

Mutton from the shoulder is best for cooking as it tends to cook faster and moreover the meat is tender and juicy. Any mutton dish prepared with shoulder-cut meat is preferred as the gravy is delectable with succulent pieces of meat.

How long does it take to cook mutton stew?

The total time to cook mutton stew is approximately 50 minutes. Sauteeing onions for the stew would take about 5 minutes plus 40 minutes for the mutton and vegetables to cook. Allowing a simmer time of about 2 minutes, your mutton stew will be ready in just under 50 minutes.

Ingredients
  

  • 500 grams Mutton with bones

  • Whole Spices (Cardamom 4, Cinnamon 2 ", Cloves 5)

  • ½ cup Green peas
  • 6 – 7 French beans

  • Salt to taste

Notes

  1.  You could also make this mutton stew in a pressure cooker to save time.
  2. Add a generous amount of black pepper powder, this adds the much-needed spice to the stew.
