Green Masala Mutton Curry | How to make Green Mutton Curry

Green Masala Mutton Curry or Green Mutton Curry is flavored with simple spices and has the freshness and fragrance of herbs like Mint and Coriander leaves.

The curry has a green masala paste with a perfect blend of spices that gives it an aromatic taste and flavour. It also has yogurt in small quantities that add to its creaminess. There are also onions that add a bit of sweetness to the curry along with a slight tang from the lemon juice and yogurt.

Unlike my Chicken in Green Curry, this Green Mutton Curry has no coconut or even coconut milk. But the Mutton Curry is thick and creamy with a fresh fragrance from the mint, coriander leaves, and spices. The curry is finger-licking delicious and has a slightly tangy and spicy taste.

My mum made this curry too often and it has become my family favourite since then. The curry is quick and easy to make and trust me, it cooks much faster in a pressure cooker. You can also cook it on the stove-top if the meat is very tender. Slow cooking is always recommended to bring out the flavours of the dish, especially meat.

Ingredients – Green Masala Mutton Curry

Fragrant herbs like Mint and Coriander along with simple spices gives this mutton curry its aroma and taste.

  • Mutton. We always prefer to use goat meat with bones. The juices from the bones add to the flavour of the curry. You can also use boneless mutton for this recipe which is just as fine.
  • Onion. I use regular red onions in my recipes, these onions being pungent are suitable for all meat dishes. When you fry these onions to a light brown color, they turn slightly sweetish and thus enhance the gravy’s taste.
  • Yogurt. You can use homemade or store-bought yogurt for this recipe. Yogurt renders a slight tangy taste to the curry and also enhances the texture by making it creamy.
  • Green Masala Paste. A perfect Green Masala will give the mutton curry its much-desired aroma and taste. There are a variety of recipes for green masala but the recipe with these ingredient work best for me –
    • Coriander and Mint Leaves. Use coriander as much as you want but add only a little of the Mint Leaves, just for flavour. Adding too many mint leaves will darken the masala paste and also overpower its flavour.
    • Green Chillies. These are the only spice component in this recipe. Use green chillies to suit your taste and your spice tolerance.
    • Ginger & Garlic. A few garlic flakes and about an inch of ginger can be used for this paste.
    • Whole Spices. Simple whole spices like Cinnamon, Cardamon, Cloves, and Pepper spice up the curry making it aromatic as well.
    • Seeds & Nuts. I use cumin seeds, poppy seeds, and cashew nuts. These are widely used in most meat curry recipes and gives flavour and texture to the curry.

How to make Green Mutton Curry

  • To make Green Mutton Curry, first of all, marinate the mutton with the green masala paste. Also, add salt, yogurt, and turmeric powder. Allow the mutton to rest for at least 30 minutes for the spices to seep in and tenderize the meat.
  • Heat a pressure cooker or a vessel and add in 3 tbsp oil. Drop in some whole spices or just bay leaves.
  • Next, add the sliced red onions and fry until it turns light brown in colour. This will enhance the flavour of the curry with a little sweetness.
  • Once the onions are brown add the marinated mutton. Saute this for at least 3 to 5 minutes on a high to medium flame. At this stage, the meat will release some moisture that will dry up gradually.
  • Now add 1/2 cup water, stir and then cover the pressure cooker and cook for 3 to 4 whistles. Then switch off the flame and let the pressure release on its own.
  • Now open the lid of the pressure cooker and check for seasonings. Adjust the gravy by adding more water, if you want it to be thinner or depending on how you want to serve it.
  • Finally, squeeze in the juice of half a lemon and mix. Green Mutton Curry is ready for serving.

Ps: If cooking this mutton curry in a vessel, you will have to add more water for cooking the meat. Also, stir occasionally to avoid burning. Slow cooking always enhances the flavour of the dish.

Serving Suggestions

Serve Green Masala Mutton Curry as the main course with parathas, naan, rotis, or even steamed rice. On festive occasions, this can be served with pulao or even Wedding Rice.

This mutton curry can also be enjoyed with some crusty bread for lunch or dinner.

Ingredients
  

  • 700 grams Mutton on bones
  • 4 tbsp Yogurt (1/4 Cup)
  • ½ tsp Turmeric Powder
  • Salt to taste

For the Green Masala (Grind to a paste)

  • cup Coriander leaves
  • ½ cup Mint leaves
  • 6 to 7 Green chillies
  • 1 inch Ginger
  • 1 pod Garlic ( 7 to 8 cloves garlic)
  • 1 tsp Cumin seeds
  • 1 tsp Poppy seeds
  • 7 to 8 Nos Cashew nuts
  • 1 inch Cardamom
  • 5 Cloves
  • 3 Green cardamoms
  • ½ tsp Peppercorns

Instructions
 

  • Marinate the mutton with the green masala paste. Also, add salt, yogurt, and turmeric powder. Allow the mutton to rest for at least 30 minutes.
