My mum made this green coconut chutney too often when we were kids and she would also make these lovely chutney sandwiches. She would religiously pack them for our school lunch boxes. Whenever we went for school picnics, mum would never fail to pack these sandwiches for us and our friends just adore these.

Mum’s Green Coconut Chutney Sandwiches have since then become a favourite with our family and friends. Even today when we go for long drives or a day’s outing or even a train journey we carry these sandwiches with us. These are so easy to assemble and carry around wherever you go. Moreover, they stay fresh the entire day when you pack them well.

This Green Coconut Chutney also stays fresh in the refrigerator for a couple of days and you can use it to make a delicious sandwich whenever hunger strikes. It is amazing that how a humble green coconut chutney can transform itself into a nutritious snack, a sandwich without much effort.

The chutney is a perfect balance of sweet, spicy, and tangy taste when you smear this on a slice of bread with butter it’s simply amazing.

Ingredients for Green Chutney

  • COCONUT – use freshly grated coconut for this chutney recipe. Fresh coconut will add texture and juiciness to the chutney thus making it delectable.
  • CORIANDER LEAVES – the star of this Green Chutney, add the fresh coriander leaves that you have. Coriander leaves add freshness to the chutney and impart a tempting green colour. The colour of your chutney totally depends on the coriander leaves, light colour leaves will yield a light chutney. Preferably use the dark green leaves that will give you a wonderful green hue.
  • GREEN CHILLIES – use green chillies to suit your spice level. The spiciness of the chillies combines with the sweetness of fresh coconut to give you a delightfully spicy and sweet taste.
  • GINGER & GARLIC – add a small bit of ginger and just 2 to 3 cloves of garlic for this green chutney recipe. We do not want to overpower the chutney with pungent flavours but want to keep it mild and sweet.
  • TAMARIND – another important ingredient of the green coconut chutney. Tamarind is responsible for giving a slight tang to the sweet and spicy coconut chutney. So do not skip tamarind, but if you don’t like using tamarind, use lemon juice instead. You will notice that a dash of sourness is the key to good coconut chutney.
  • SUGAR & SALT – Sugar compliments the spicy and sour taste of the chutney and salt adds flavour to it. Do not add too much sugar, just a tablespoon will be fine, or you will lose on the other flavours of the chutney.

Tips to make amazing Green Coconut Chutney

  1. Always use freshly grated coconut to make the chutney. Preferably discard the brown part of the coconut and use only the white portion for making the chutney.
  2. Use fresh coriander leaves and wash them well before you could blend them with other ingredients. Use either the light green or the dark green leaves but this will slightly alter the green colour of the chutney.
  3. Add chillies to suit your spice level.
  4. Do not skip the tamarind as this gives the desired tang to the chutney. You could use lemon juice instead if you cannot lay your hands on tamarind.
  5. Add a dash of sugar to enrich the sweet taste of the chutney. You could adjust sugar to suit your taste.
  6. Lastly, to get the perfect sweet, spicy and tangy taste keep tasting the chutney as you process it and adjust the ingredients to suit your palate.
