Gajar ka Halwa Easy Recipe – When carrots are available in plenty during winters, it’s time to try out this Gajar ka Halwa Quick & Easy Recipe (Carrot Halwa Easy Recipe).

Gajar ka Halwa using Khoya is so quick and easy recipe that you can make with freshly grated carrots. Simmer them in milk to get a rich and delicious carrot halwa at home.

Gajar ka Halwa or Carrot Halwa is a simple yet popular recipe made in every Indian kitchen at least once during the winter season.

Carrots are abundantly grown in winter, especially in the Northern regions of India. Carrots grown in this region are very juicy, sweet, and tender and are just perfect to make this gajar ka halwa. We use carrots in Subzi for rotis and also transform them into this delicious Gajar ka Halwa Recipe.

The recipe for making carrot halwa is almost the same in every family and it is a Traditional Family dessert of every Indian home. Some make Gajar ka Halwa using khoya and some make delicious carrot halwa with only milk.

Today we are making this easy Carrot Halwa using Khoya and it turns out to be extremely rich and delicious. You must try out this carrot halwa at least once at home especially during the winter season.

Ingredients for Gajar ka Halwa (1 Kg)

  • CARROTS: 1 kg carrots that will give you about 6 – 8 medium carrots. Carrots that are available in winter are sweet and hence we make carrot halwa mostly during winters. Grate these carrots but discard the white core and keep them aside.
  • GHEE: Add two tablespoons of pure ghee/clarified butter for frying the grated carrots. Adding ghee is optional and you could feel free to skip this. But ghee gives a lovely texture, flavour and sheen to the carrot halwa.
  • MILK: Two cups of full fat milk is just sufficient to cook 1 kg of grated carrots. I sugguest that you use full-fat milk for better taste.
  • SUGAR: How much sugar in 1 Kg carrot halwa? I use one cup (200 gms) of granulated sugar in 1 Kg Carrot Halwa. This is just enough to sweeten the halwa but feel free to add more to suit your taste. Alternatively, you could add condensed milk instead of granulated sugar.
  • SPICE & NUTS: Garnish the carrot halwa with chopped cashew nuts, pistachio, or slivered almonds. Adding raisins is optional but feel free to add them if you like. But do not skip the cardamom powder, this renders an authentic flavour to the gajar ka halwa. Nutmeg powder also tastes wonderful in carrot halwa so add a dash of it.
  • MAWA/KHOYA: Khoya or Mawa is milk solids that we use in a variety of Indian sweets. Khoya in enhances the taste and texture of the halwa. Use 100 grams in 1 kg carrot halwa or adjust as per your taste.

How to make Gaja ka Halwa (1 Kg)

  • Wash the carrots and then peel, grate and set them aside.
  • In a Kadai add 2 tablespoons pure ghee and the grated carrots and then fry the carrots for 2 – 3 minutes.
  • Now add 2 cups of full fat milk and cover the vessel or kadai and cook the carrots till done.
  • Once the carrots are tender and milk has evaporated then add 1 cup sugar. When you add sugar the carrots will stop cooking further. So ensure that you cook the carrots well before you add the sugar.
  • When the liquids in the vessel almost evaporate then add in the khoya and the nuts and continue cooking for a few more minutes till the liquids completely dry up.
  • Before you switch off the flame add a generous amount of cardamom powder & nutmeg powder and garnish with some pistachios and almond slivers.

Ingredients
  

  • 1 kg Orange Carrots, about 6 – 7 medium carrots
  • 2 tbsp Ghee/Clarified butter
  • 2 cups Milk, full fat
  • 1 cup Sugar
  • 100 grams Mawa/Evaporated milk solids
  • 1 tsp Cardamom powder & Nutmeg powder
  • Nuts like cashew, pistachios, and almonds

How to prepare Carrot halwa

  • In a Kadai add 2 tablespoons ghee and the grated carrots.
  • Fry the carrots for 2 – 3 minutes. Now add 2 cups milk and cover and cook the carrots till done.
  • Once the carrots are tender and milk has evaporated add sugar.
  • When the liquids are almost dried, add in the Mawa and nuts and continue cooking.
  • Dry up all the liquids and add the cardamom & nutmeg powder before you switch off the flame.
  • Garnish with pistachios and slivered almonds.

Notes

  1.  Add a little extra sugar if you want your carrot halwa a little sweeter.
  2.  You could reduce the quantity of mawa and still make an awesome halwa.
  3. Use condensed milk instead of sugar.
