Fish Stew Ingredients
Fish – We like to use Pomfrets for this fish stew recipe because it has a very mild flavour. The fish absorbs the flavours of the curry making it more delectable.
Onions & Tomatoes -these form the base of the stew. Finely chop and saute them, along with the other ingredients to make a flavourful curry.
Ginger, Garlic & Green Chillies – Chop ginger and garlic finely and slit the green chillies. You may also prefer to use ginger-garlic paste for this recipe. Finally, garnish the stew with ginger julienne. I recommend using more chillies if you like the stew to be spicy.
Black Pepper Powder – this is one of the much-needed ingredients of this recipe, so do not skip it. Pepper not only adds flavour to the stew but also adds spice. Use freshly ground pepper for added spice that compliments the stew.
Other Ingredients – We like to add a little coriander powder to flavour the stew. Adding turmeric gives a nice greenish-yellow colour to the stew. A dash of vinegar or lemon juice gives a little more tang to the fish stew.
How to Prepare Fish Stew
- First, wash and cut the fish into slices, as per your choice depending on the size of the fish. Then apply salt and a generous amount of turmeric to the fish and let it marinate for 10 to 15 minutes.
- Finely chop 02 onions and slit a few green chillies. Add chillies to suit your taste and your spice levels. I suggest you use more of them to keep the fish stew spicy. Also, finely chop 2 medium tomatoes and cut some ginger into thin julienne..
- Heat 2 tbsp oil in a pot and saute the chopped onions until they are translucent. When the onions turn translucent, add ginger garlic paste and the green chillies, and also the ginger juliennes. Fry this for a minute or two and then add a teaspoon of coriander powder and continue to saute. Later, add chopped tomatoes and fry until the tomatoes turn soft.
- Add water, approximately 300 ml, or as required to make gravy for the stew. Be very mindful while adding water, or else your stew will turn watery. Add pepper powder and let the gravy come to a boil.
- After the gravy comes to a boil, add the fish and cover, and cook for 2 to 3 minutes. Don’t overcook the fish as it is very delicate and will tend to break in the stew. Once the stew is almost done, add a dash of vinegar or lemon juice.
- Finally, garnish fish stew with fresh coriander leaves. Easy Fish Stew Recipe with tomatoes, ginger, and pepper is ready to be served.
- You could also finish off the fish stew recipe with coconut milk and this will result in a creamy fish stew.

Tips for making the perfect fish stew
- Use fresh, high-quality fish. Look for firm white fish that’s sustainably sourced and has a mild flavor. For this recipe, I have used fresh pomfret fish.
- Don’t overcook the fish. Fish cooks quickly, so be careful not to leave it in the pot for too long. Overcooked fish can become tough and lose its taste.
- Add fresh herbs at the end. Fresh herbs, such as coriander and mint, add a burst of flavor and freshness to the stew. Add them at the end of the cooking process to preserve their bright color and flavor.
- Serve with crusty bread. Crusty bread is the perfect accompaniment to fish stew, as it soaks up the flavorful broth.
Variations of fish stew with tomatoes
Fish stew with tomatoes is a versatile dish that you can customize to your taste. Here are some variations to try:

– Use different herbs and spices. Experiment with different herbs and spices, to create a unique flavor profile.
– Make it spicy. Add red chilli flakes or hot sauce to the stew for a spicy kick.
